Job Summary

Key Responsibilities
- Plan and prepare Indian cuisine for banquets, events, buffets, and special functions.
- Prepare food in large quantities while maintaining consistent taste and quality.
- Handle preparation of North Indian, South Indian, and regional Indian dishes as required.
- Manage mise en place and ensure all ingredients are prepared before service.
- Coordinate with the Executive Chef, Sous Chef, and banquet team for event requirements.
- Follow standardized recipes, portion sizes, and presentation standards.
- Plan food requirements according to guest count and event menus.
- Monitor food quality, taste, freshness, and presentation throughout service.
- Ensure timely preparation of food for scheduled events.
- Supervise Commis Chefs, kitchen helpers, and other supporting staff.
- Allocate work and monitor kitchen staff during banquet operations.
- Maintain proper stock levels of ingredients and communicate requirements to the store/purchase team.
- Minimize food wastage through proper planning, portion control, and storage.
- Ensure proper storage,



labeling, and handling of food ingredients.
- Maintain cleanliness and hygiene of the kitchen and assigned work areas.
- Follow food-safety and sanitation standards at all times.
- Assist in menu planning and development of banquet menus.
- Support special events, weddings, buffet services, and high-volume functions.
- Monitor kitchen equipment and report maintenance requirements.
- Handle pressure efficiently during peak banquet service periods.

Required Skills:
- Strong knowledge of Indian cuisine and traditional cooking techniques.
- Experience in high-volume banquet and bulk food preparation.
- Good knowledge of spices, ingredients, sauces, gravies, breads, rice, curries, and Indian snacks.
- Strong kitchen coordination and team-management skills.
- Good understanding of food hygiene and safety practices.
- Ability to maintain consistent taste and quality in large-volume production.
