The KST Supervisor is responsible for supervising the complete cleaning and hygiene operations of the restaurant. The person will manage cleaning staff, allocate duties, monitor cleanliness throughout the day, ensure proper use of cleaning chemicals and equipment, and maintain i’Deli Cafe’s hygiene standards across the kitchen, dining area, washrooms, counters, storage areas, and external premises.

Key Responsibilities

1. Cleaning Staff Management

- Supervise and allocate duties to all cleaning/KST staff.
- Prepare daily cleaning schedules and staff deployment.
- Monitor attendance, punctuality, grooming, and discipline.
- Ensure sufficient cleaning staff are available during operating hours.
- Train staff on cleaning procedures, hygiene standards, and safe chemical handling.
- Monitor staff performance and provide corrective instructions where required.

2. Restaurant Cleaning & HygieneEnsure continuous cleanliness of:

- Dining areas
- Tables and chairs
- Floors and walls
- Kitchen and preparation areas
- Dosa, idli, poori and snack counters
- Tea and coffee counters
- Juice counters
- Billing and customer areas
- Hand-wash areas
- Washrooms
- Staff areas
- Stores and storage areas
- Garbage collection areas
- Entrance, parking and external premises

3. Kitchen Cleaning

- Ensure regular cleaning of kitchen floors, walls, drains and work areas.
- Monitor cleaning of cooking equipment and utensils.
- Ensure grease, oil and food residue are removed properly.
- Ensure exhaust hoods, filters and surrounding areas are cleaned as per schedule.
- Ensure cleaning is carried out without affecting food production or food safety.
- Coordinate with the kitchen team for equipment cleaning and shutdown cleaning.

4. Washroom Management

- Conduct frequent washroom inspections.
- Ensure toilets, urinals, wash basins, mirrors and floors are properly cleaned.
- Maintain continuous availability of handwash, tissue, soap and other consumables.
- Ensure washrooms are cleaned immediately whenever required.
- Maintain washroom inspection records.

5. Cleaning Checklist & Audits

- Implement daily, weekly and monthly cleaning checklists.
- Ensure staff complete assigned tasks and sign/check the relevant checklist.
- Conduct regular physical inspections.
- Record deficiencies and ensure corrective action is completed.




- Conduct and maintain deep-cleaning schedules.
- Report recurring hygiene issues to management.

Deep Cleaning Responsibilities

Ensure scheduled deep cleaning of:

- Kitchen floors and walls
- Exhaust and ventilation areas
- Drains
- Ceilings and high-level areas
- Fans and fixtures
- Glass and windows
- Dining furniture
- Refrigerators and storage equipment
- Cooking equipment
- Food counters
- Washrooms
- Garbage areas
- Parking and external areas
- Hard-to-reach areas

Chemical & Equipment Management

- Ensure cleaning chemicals are stored safely and correctly labelled.
- Ensure correct dilution and usage of cleaning chemicals.
- Prevent misuse and unnecessary wastage of chemicals.
- Maintain cleaning equipment in good condition.
- Monitor availability of mops, brushes, scrubbers, gloves, garbage bags, chemicals and other cleaning supplies.
- Inform the Store Keeper/Manager about replenishment requirements.

Waste Management

- Ensure proper segregation and disposal of waste.
- Ensure garbage bins are cleaned and maintained.
- Ensure garbage is removed from food-production and customer areas at regular intervals.
- Maintain cleanliness around garbage storage areas.
- Coordinate with waste collection agencies/vendors where required.

Pest-Control Coordination

- Coordinate with approved pest-control agencies.
- Report signs of insects, rodents, flies or other pest activity immediately.
- Ensure pest-control schedules are followed.
- Maintain pest-control records and reports.
- Ensure corrective actions are implemented after pest-control inspections.

Safety Responsibilities

- Ensure cleaning staff use appropriate PPE such as gloves and footwear.
- Ensure wet-floor warning signs are used.
- Prevent cleaning chemicals from coming into contact with food or food-contact surfaces.
- Ensure chemicals are never stored together with food ingredients.
- Immediately report accidents, spills, breakages or unsafe conditions.

Opening & Closing Duties

Opening:





- Inspect restaurant cleanliness before opening.
- Ensure dining area, washrooms, kitchen and external areas are ready.
- Verify cleaning staff deployment.
- Check availability of cleaning materials.

During Operations:

- Conduct periodic cleanliness inspections.
- Ensure immediate cleaning of spills and high-traffic areas.
- Monitor washrooms and customer areas continuously.
- Reassign staff based on operational requirements.

Closing:

- Supervise complete closing cleaning.
- Ensure garbage is removed.
- Ensure kitchen and dining areas are properly cleaned.
- Verify all assigned cleaning tasks are completed.
- Complete closing checklist and report pending issues.

Qualification & Experience

- Minimum 10th/12th standard preferred.
- 2–4 years of experience in restaurant, hotel, QSR, hospital, mall or commercial housekeeping.
- Previous experience supervising housekeeping/cleaning staff preferred.
- Experience in a high-volume food-service workplace will be an advantage.

Ideal Candidate

A hands-on and disciplined cleaning supervisor who does not merely assign work but actively inspects the premises, follows up with staff, identifies cleanliness gaps, and ensures that the restaurant maintains a consistently high standard of hygiene throughout the day.

Pay: ₹25,000.00 - ₹30,000.00 per month
