Bar OJT (On-the-Job Trainee)

Purpose of the Role To undergo hands-on training in bar operations under supervision, learning beverage preparation, service standards, and hygiene protocols, with the objective of progressing to a Bartender role.

Key Responsibilities

- Undergo structured on-the-job training in bar operations and SOPs under supervision.
- Observe and assist Bartenders/Senior Bartenders in beverage preparation and service.
- Learn correct handling of bar equipment, glassware, and garnishes.
- Learn beverage menu knowledge — cocktails, spirits, wines, beers, and non-alcoholic offerings.
- Understand standard recipes, measures, and pouring/costing controls.
- Understand hygiene, sanitation, and responsible alcohol service protocols.
- Assist with bar mise-en-place, stocking, and cleanliness of the bar area.
- Learn correct sequence of guest interaction, order-taking, and billing basics at the bar.
- Assist in maintaining par stock levels and basic inventory checks.
- Attend training sessions and complete assessments/evaluations as required.
- Maintain discipline, punctuality, and grooming standards as per company policy.

Eligibility / Qualifications

- Minimum 10+2 (Higher Secondary); hotel management/hospitality diploma an advantage.
- No prior experience required — freshers eligible.
- Minimum age as per applicable state excise/liquor service regulations.
- Basic English/Hindi communication skills.
- Pleasant personality, presentable, and guest-service orientation.

Skills To Be Developed During Traineeship

- Beverage preparation techniques, recipes, and measures
- Bar equipment handling and glassware knowledge
- Hygiene, sanitation, and responsible alcohol service
- Guest interaction and basic service etiquette
- Stock handling and par level maintenance

Working Conditions

- Rotational shifts (including nights, weekends, and holidays), as bar operations are 24x7.
- Standing for extended periods in a fast-paced, high-footfall environment.
- Work in a high-security, camera-monitored environment.

Duration & Progression

- Minimum 3 months, subject to performance evaluation.
- Successful OJTs are absorbed as Bartender based on skill assessment.

Bartender Purpose of the Role To independently prepare and serve beverages to guests with accuracy, consistency, and flair,



ensuring an excellent bar experience in line with service and hygiene standards.

Key Responsibilities

- Prepare cocktails, mocktails, and beverages accurately as per standard recipes and measures.
- Take guest orders at the bar, recommend drinks, and upsell premium offerings where appropriate.
- Handle billing, payment processing, and accurate settlement of guest checks at the bar.
- Maintain proper stock levels, requisitions, and storage of liquor, mixers, and garnishes.
- Ensure correct portioning/pouring as per costing and control guidelines to minimize wastage/pilferage.
- Maintain cleanliness and hygiene of the bar counter, equipment, and glassware at all times.
- Adhere to responsible alcohol service guidelines, including age verification and guest intoxication checks.
- Coordinate with F&B; service staff and kitchen for smooth order fulfillment.
- Address guest requests and minor complaints professionally, escalating where necessary.
- Maintain grooming and conduct standards as per company policy.

Eligibility / Qualifications

- Minimum 10+2; hotel management/hospitality diploma preferred.
- 6 months–1 year of bartending experience preferred (freshers with strong aptitude may be considered).
- Minimum age as per applicable state excise/liquor service regulations.
- Good English/Hindi communication skills; additional languages an advantage.
- Strong product knowledge, multitasking, and guest-handling skills.

Skills To Be Developed / Applied

- Advanced beverage preparation and presentation (flair/mixology)
- Upselling and guest recommendation techniques
- Stock control, costing, and wastage management
- Responsible alcohol service compliance
- Coordination with F&B; service and kitchen teams

Working Conditions

Progression

- Based on performance, may progress to Senior Bartender.

Senior Bartender Purpose of the Role To take on added responsibility for bar service quality, stock control, and guidance of junior Bartenders/OJTs, ensuring consistent standards and smooth bar operations during the shift.

Key Responsibilities

- Oversee bar operations and service standards across the shift, ensuring consistency and quality.
- Guide and train Bartenders and OJTs on recipes, techniques, and responsible service standards.
- Create and update cocktail menus, specials, and promotions in coordination with F&B; management.
- Manage bar inventory, requisitions, and stock reconciliation, minimizing wastage and pilferage.
- Handle VIP guests and special requests with a higher level of service and presentation.
- Handle escalated guest complaints, resolving them professionally or routing to the Supervisor/Manager.
- Conduct spot checks on hygiene, portioning accuracy, and bar presentation standards.
- Coordinate staff scheduling, break rotations, and task allocation within the bar team.
- Maintain shift reports, billing accuracy, stock records, and handover documentation.
- Ensure strict adherence to excise regulations, responsible alcohol service, and hygiene standards by the team.

Eligibility / Qualifications

- Minimum 10+2/Graduate; hotel management/hospitality diploma preferred.
- 1–2 years of bartending experience, with demonstrated reliability and performance.
- Good English/Hindi communication skills; additional languages an advantage.
- Strong leadership, mixology, and guest-handling skills.
