F&B; Service OJT (On-the-Job Trainee)
Purpose of the Role To undergo hands-on training in food and beverage service operations under supervision, learning service procedures, hygiene standards, and guest service etiquette, with the objective of progressing to a Steward(ess) role.
Key Responsibilities
- Undergo structured on-the-job training in F&B; service procedures and SOPs under supervision.
- Observe and assist Stewards/Senior Stewards during table setup, service, and clearing.
- Learn correct handling of crockery, cutlery, glassware, and service equipment.
- Learn food and beverage menu knowledge, including basic dishes, ingredients, and beverage offerings.
- Understand hygiene, sanitation, and food safety protocols (FSSAI/HACCP basics).
- Assist with mise-en-place, table/section readiness, and replenishment of service items.
- Learn correct sequence of service, order-taking basics, and guest interaction etiquette.
- Assist in clearing and resetting tables promptly and efficiently.
- Attend training sessions and complete assessments/evaluations as required.
- Maintain discipline, punctuality, and grooming standards as per company policy.
Eligibility / Qualifications
- Minimum 10+2 (Higher Secondary); hotel management/hospitality diploma an advantage.
- No prior experience required — freshers eligible.
- Basic English/Hindi communication skills.
- Pleasant personality, presentable, and guest-service orientation.
- Physically fit and willing to work in an active, hands-on role.
Skills to be Developed During Traineeship
- Table setup, service sequence, and clearing techniques
- Menu knowledge — food and beverage
- Hygiene, food safety, and sanitation standards
- Guest interaction and basic service etiquette
- Coordination with kitchen and bar staff
Working Conditions
- Rotational shifts (including nights, weekends, and holidays), as F&B; operations are 24x7.
- Standing and moving for extended periods in a fast-paced service environment.
- Work in a high-security, camera-monitored environment.
Duration & Progression
- Minimum 3 months, subject to performance evaluation.
- Successful OJTs are absorbed as Steward(ess) based on skill assessment.
Steward(ess)
Purpose of the Role To independently deliver efficient, courteous,
and hygienic food and beverage service to guests, ensuring an excellent dining experience in line with service standards.
Key Responsibilities
- Set up tables/sections and ensure mise-en-place is complete prior to service.
- Greet, seat, and attend to guests, taking food and beverage orders accurately.
- Serve food and beverages promptly, following correct service sequence and etiquette.
- Coordinate with kitchen and bar staff for timely and accurate order fulfillment.
- Recommend menu items, upsell where appropriate, and answer guest queries on offerings.
- Handle billing, payment processing, and accurate settlement of guest checks.
- Clear and reset tables promptly, maintaining cleanliness of the service area.
- Ensure proper handling and storage of crockery, cutlery, glassware, and linen.
- Adhere to hygiene, food safety, and sanitation protocols at all times.
- Address guest requests and minor complaints professionally, escalating where necessary.
- Maintain grooming and conduct standards as per company policy.
Eligibility / Qualifications
- Minimum 10+2; hotel management/hospitality diploma preferred.
- 6 months–1 year of F&B; service experience preferred (freshers with strong aptitude may be considered).
- Good English/Hindi communication skills; additional languages an advantage.
- Strong guest-handling, multitasking, and product knowledge.
Skills to be Developed / Applied

Senior Steward(ess)
Purpose of the Role To take on added responsibility for service quality, section supervision, and guidance of junior Stewards/OJTs, ensuring consistent guest service and operational standards during the shift.
Key Responsibilities
- Oversee service standards and execution across assigned tables/sections during the shift.
- Guide and train Stewards and OJTs on service sequence, menu knowledge, and guest etiquette.
- Handle VIP guests, large covers, or special requests with a higher level of service finesse.
- Coordinate closely with kitchen and bar to manage order flow and resolve delays.
- Manage table allocation, section coverage, and break rotations within the team.
- Handle escalated guest complaints, resolving them professionally or routing to the Supervisor/Manager.
- Conduct spot checks on hygiene, table presentation, and service standards.
- Assist in stock checks, requisitions, and inventory of service equipment and linen.
- Maintain shift reports, billing accuracy, and handover documentation.
- Ensure strict adherence to hygiene, food safety, and grooming standards by the team.
Eligibility / Qualifications
- Minimum 10+2/Graduate; hotel management/hospitality diploma preferred.
- 1–2 years of F&B; service experience, with demonstrated reliability and performance.
- Positive English/Hindi communication skills; additional languages an advantage.
- Strong leadership, guest-handling, and problem-solving skills.
