- Assist the Sous Chef and Executive Chef in the smooth operation of the Pan-Asian kitchen.
- Supervise and coordinate the work of Commis Chefs, Demi Chefs and other kitchen staff.
- Prepare and present authentic and contemporary Pan-Asian dishes, including Chinese, Japanese, Thai, Korean and other Asian cuisines as required.
- Ensure all dishes are prepared according to standard recipes, portion sizes, presentation standards and quality specifications.
- Monitor mise en place and ensure adequate preparation before every service.
- Check the freshness and quality of ingredients and ensure proper storage and FIFO practices.
- Maintain food cost and minimize wastage through proper portion control and stock management.
- Assist in menu planning, recipe development and daily specials.
- Ensure correct handling and storage of seafood, meat, poultry, vegetables, sauces and other ingredients.
- Maintain high standards of food hygiene, personal hygiene and kitchen sanitation in accordance with HACCP and hotel standards.




- Monitor cooking temperatures and ensure protected food-handling practices.
- Conduct regular checks of kitchen equipment and report maintenance requirements.
- Assist with receiving, checking and storing kitchen supplies.
- Coordinate effectively with the Stewarding, Stores, F&B; Service and other departments.
- Train and guide junior kitchen team members on recipes, preparation methods, hygiene and safety procedures.
- Maintain proper kitchen discipline and ensure compliance with hotel policies and SOPs.
- Support the Sous Chef during busy operations, banquets, special events and high-volume service.
- Assist with inventory and daily/weekly stocktaking.
- Ensure proper cleaning and closing procedures are followed at the end of each shift.
- Handle guest requests, special dietary requirements and food allergies carefully and communicate them to the relevant team members.
- Maintain consistency in taste, texture, temperature and presentation of all dishes.
