Production Manager – Gelato manufacturing in Mumbai (Chembur/Govandi)
We are looking for an experienced and hands-on Production Manager to join our growing gelato brand. The ideal candidate should have a minimum of 3 years of experience in F&B;, food production, with strong leadership, planning, and problem-solving skills.
The candidate must be a hard worker, organized, responsible, and able to independently manage the production team and daily operations. Good English communication skills are required, along with basic computer knowledge.
Experience and knowledge of cold-chain management, food safety, hygiene, production processes, inventory, and quality control are essential.
We are looking for someone who can take ownership of production, build and manage a strong team, solve problems quickly, maintain product consistency, and ensure that production runs efficiently and on time.
Production Manager
Recruitment & F&B; Network
- Be able to source and recommend suitable candidates for production and kitchen positions when required, like Commis, Kitchen Helpers, Housekeeping staff.
- Maintain a list/database of potential candidates and reliable staffing contacts for urgent hiring requirements.
- Use previous professional contacts, referrals, hospitality networks and local F&B; connections to reduce hiring time.
Problem Solving & Decision Making
- Act as the first point of contact for production-related problems and take ownership of resolving them.
- Identify the root cause of problems rather than only fixing the immediate issue.
- Quickly troubleshoot issues related to recipes, ingredients, equipment, staff,
production processes, quality, wastage and delays.
- Make practical and timely decisions to keep production running efficiently.
- Know when an issue can be solved internally and when it needs to be escalated to QA/QC, management, maintenance or suppliers.
- Implement corrective actions and ensure the same problem does not repeatedly occur.
- Remain calm and solution-oriented during production pressure, staff shortages, equipment breakdowns or urgent orders.
- Be proactive in identifying potential problems before they affect production.
- Maintain explicit communication with management and relevant teams when problems occur.
- Take responsibility for the outcome rather than simply reporting the problem.
Production planning
- Plan production based on sales forecasts and inventory.
- Coordinate production around delivery and dispatch deadlines.
Raw materials & inventory
- Check availability of all ingredients and packaging before production.
- Monitor raw material consumption and wastage.
- Coordinate with purchasing for upcoming requirements.
- Ensure ingredients are stored correctly according to temperature and storage requirements.
- Check incoming raw materials for quality and specifications.
Recipe & product consistency
- Ensure every batch follows the approved recipe and SOP.
- Monitor critical parameters such as:
- Pasteurization temperature/time
- Freezing temperature
- Filling weight
- Hardening/freezing conditions
- Ensure the final product is consistent in taste, texture, appearance and weight.
- Prevent unauthorized recipe changes.
Food safety & hygiene
- Ensure GMP, hygiene and sanitation procedures are followed.
- Maintain cleaning schedules and records.
Quality control
- Batch records are completed correctly.
- Samples are retained where required.
- Products are checked before release.
- Deviations are documented and investigated.
- Corrective actions are implemented.
- Non-conforming products are isolated and not accidentally dispatched.
Team management
- Manage production staff and allocate daily responsibilities.
- Train staff on SOPs, hygiene and equipment.
- Monitor employee performance.
- Ensure adequate staffing for each production shift.
- Handle discipline and performance issues when necessary.
- Build a culture of accountability and responsibility.
Equipment
- Ensure production equipment is operated correctly.
- Coordinate repairs and servicing.
- Report equipment problems before they become production failures.
