Maiz is scaling its dine-in footprint aggressively over the next 24 months, alongside a growing portfolio of Harvest outlets. We're looking for a DGM – Operations to drive dine-in operations and expansion across stores — from launching recent outlets to building the systems and standards that help our city teams run a tight, profitable, guest-first network at scale. This is a senior operating role, working closely with city heads and outlet teams, pan India.

What You'll Own

- Dine-In P&L;, Pan India —

own operational performance, revenue, and profitability across dine-in stores
- New Outlet Launch & Ramp-Up —

lead the opening and stabilisation of new dine-in outlets in line with the expansion roadmap
- Operating Systems at Scale —

build and continuously improve SOPs, service standards, and training systems that hold up across a fast-growing network
- Guest Experience & Compliance —

drive consistency in guest experience, quality, and hygiene/food-safety standards across dine-in stores
- Team & Org Building —

partner with Area/Regional Managers and city teams; help build out the operations org structure as the network scales
- Unit Economics —

track and improve food cost, labour cost, wastage, and outlet-level opex
- Cross-Functional Partnership —

work closely with Projects, Maintenance,



and Supply Chain to ensure new outlets open on time and run smoothly
- Manpower Planning —

own hiring, training, and retention for outlet-level teams pan India
- Harvest Oversight —

extend operational oversight to Harvest outlets alongside the core Maiz dine-in portfolio

What We're Looking For

- 8–12 years in multi-unit restaurant operations, ideally from the QSR or organised F&B;/casual dining industry
- A proven track record of running and scaling dine-in outlet networks (20+ outlets managed directly or through a team)
- Strong P&L; ownership and a sharp handle on unit economics
- Experience building operating systems and SOPs from scratch, not just running an existing playbook
- A team-builder who's managed Area/Regional Managers and can build a layered ops structure
- High ownership, a ground-level presence, and willingness to travel extensively, pan India
- Data-driven approach to decision-making
