Harley's Fine Baking is looking for an experienced Production Head Chef to lead our large-scale culinary and production operations.

This is a senior leadership role for a chef who can go beyond the kitchen — someone who understands production planning, standardisation, food safety, costing, productivity and large-team management, and can build a disciplined, scalable production operation.

What You'll Own?‍? Production & Operations

- Lead day-to-day culinary and production operations.
- Plan production based on demand forecasts and inventory.
- Ensure production targets are achieved within quality and delivery timelines.
- Optimise manpower, equipment and other production resources.

? Quality & Standardisation

- Drive consistency in taste, texture, appearance and presentation.
- Standardise recipes, production methods and SOPs.
- Identify and eliminate process inefficiencies, waste and rework.

? Cost & Productivity

- Own recipe costing, yield management and portion control.
- Control raw-material utilisation and production wastage.
- Improve productivity and reduce costs without compromising product quality.

?️ Food Safety & Compliance

- Ensure compliance with HACCP, GMP, hygiene, sanitation, temperature control, allergen management and traceability.
- Work closely with QA/QC on audits,



inspections and corrective actions.

? People Leadership

- Lead, train and develop a large production team.
- Manage rosters, shifts and manpower deployment.
- Work cross-functionally with Procurement, Stores, QA/QC, Sales, HR and Dispatch to ensure smooth end-to-end operations.

Who We're Looking For
- 15+ years of relevant culinary/food production experience.
- Degree/Diploma in Hotel Management, Culinary Arts, Food Production or equivalent.
- Proven experience managing large-volume kitchen or food production operations.
- Experience in one or more of:
- 5-star hotels / premium hospitality
- Bakery & patisserie production
- Airline or institutional catering
- Commissaries / central kitchens
- Organised food businesses
- Strong experience leading large culinary/production teams.
- Working knowledge of HACCP, GMP, food safety, recipe costing, yields, wastage control and process standardisation.
