Responsible for preparing authentic Bengali cuisine and signature seafood dishes, maintaining taste consistency, and ensuring strict kitchen hygiene.
Key Responsibilities
Cook classic Bengali seafood curries (Kalia, Jhol, Malai Curry), gravies, rice items, and meat dishes.
Prepare traditional fish snacks and starters (Fish Fry, Fish Finger, Cutlets) following standard recipes.
Clean, descale, portion, and properly store fresh fish and seafood.
Maintain station cleanliness, follow FSSAI food safety norms, and manage prep during peak service hours.
Monitor daily ingredient stock and minimize food wastage.
Requirements
2+ years of experience in Bengali commercial cooking or catering.
Expertise in Bengali spices, mustard gravies, and seafood handling.
Ability to work rapid-paced shifts, weekends, and festive peak seasons.
