About the Role

We are looking for an experienced and responsible Purchase Manager to manage procurement operations for our hotel and restaurant business in Noida.

The ideal candidate should have 4–6 years of relevant purchase/procurement experience in the hotel, restaurant, hospitality, or F&B; industry, with strong knowledge of food & beverage procurement, vendor management, negotiation, quality control, and inventory coordination.

Key Responsibilities

- Manage end-to-end purchasing and procurement for hotel and restaurant operations.
- Source and purchase food ingredients, beverages, groceries, fresh produce, dairy, meat, seafood, bakery items, packaging materials, cleaning supplies, and other operational requirements.
- Identify, evaluate, negotiate with, and maintain relationships with reliable vendors and suppliers.
- Obtain and compare quotations to ensure the best price, quality, and payment terms.
- Negotiate rates, credit terms, delivery schedules, and other commercial conditions with suppliers.
- Ensure timely procurement of perishable and non-perishable items as per operational requirements.
- Coordinate closely with the Executive Chef, Kitchen, F&B;, Stores, Operations, Accounts, and Management for purchase requirements.
- Verify product quality, quantity, specifications, expiry dates, and delivery conditions at the time of procurement.
- Monitor market prices and identify opportunities for cost savings and better sourcing.




- Maintain an updated vendor database and develop alternate suppliers wherever required.
- Prepare and process Purchase Orders (POs) and ensure proper documentation of all purchases.
- Follow up with suppliers for pending orders, delayed deliveries, shortages, replacements, and quality issues.
- Coordinate with the Store/Inventory team to maintain optimum stock levels and minimize wastage.
- Monitor food and material consumption patterns and support inventory and food cost control.
- Ensure proper procurement of seasonal and high-demand items without affecting operations.
- Review vendor performance regularly based on quality, price, delivery, and service.
- Handle vendor disputes, rate discrepancies, quality complaints, and purchase-related issues.
- Maintain purchase records, invoices, quotations, comparative statements, and other procurement documentation.
- Prepare daily/weekly/monthly purchase reports and MIS for management.
- Ensure all purchases comply with company policies, approved budgets, food safety requirements, and operational standards.

Candidate Requirements

- Graduate degree in Commerce, Business Administration, Hospitality Management, Supply Chain, or a related field.
- 4–6 years of relevant experience in Purchase/Procurement, preferably within the hotel, restaurant, hospitality, or F&B; industry.
- Strong knowledge of F&B; purchasing and hospitality procurement.




- Good understanding of food products, perishables, grocery, beverages, packaging, and general hotel supplies.
- Strong vendor negotiation and relationship management skills.
- Good knowledge of local markets and supplier networks will be an advantage.
- Strong understanding of inventory, stock levels, food cost, and wastage control.
- Proficiency in MS Excel and preferably experience with hotel/restaurant ERP or purchase software.
- Good communication and interpersonal skills.
- Robust follow-up, analytical, and problem-solving abilities.
- Ability to work under pressure and manage urgent procurement requirements.
- Should be organized, proactive, and commercially aware.

Compensation

Immediate joiners / candidates with short notice periods will be preferred.
