Chef - Indian & Tandoor Specialist

(North Indian | Tandoor | Himachali Cuisine)

Job Overview

We are hiring an experienced Chef - Indian & Tandoor Specialist to lead the kitchen of a busy riverside café attached to a boutique hotel. This is a leadership and execution role, not just cooking. You will be responsible for food quality, consistency, costing, hygiene, and team management.

If you cannot handle pressure service or run a Tandoor independently, this role is not for you.

Key Responsibilities Kitchen Leadership & Menu Control
- Lead and manage the complete Indian & Tandoor kitchen operations
- Standardize recipes for:
- Tandoor items (Roti, Naan, Kebabs, Tikkas)
- North Indian gravies
- Local Himachali dishes (especially Trout preparations)
- Maintain taste consistency during high-volume service

Costing,



Hygiene & Operations
- Control food cost, portion sizes, and raw material usage
- Plan daily mise-en-place and production schedules
- Maintain FSSAI-level kitchen hygiene and safety standards
- Coordinate with management on menu pricing and wastage control

Team Management
- Train and supervise junior cooks, commis, and helpers
- Assign duties and manage kitchen discipline
- Ensure smooth coordination between kitchen and service staff

Requirements:
- 3-5 years experience as Chef or Senior Chef (Indian/Tandoor)
- Solid expertise in Tandoor operations (mandatory)
- Hands-on experience with North Indian and mountain cuisine
- Ability to manage a busy service independently
- Willingness to stay on-site in an off-beat mountain location
