Role Overview

We are seeking a highly analytical and detail-oriented F&B; Controller who can drive micro-level operational control, prevent pilferage, minimize wastage, and strengthen overall cost governance across outlets and warehouse operations.

Key Responsibilities1. Sales & Revenue Control
- Prepare and submit Daily & Weekly Sales Reports to Management.
- Conduct detailed analysis of:
- Online Aggregator Sales, Orders, Ratings & Customer Feedback.
- Sales Mix, Menu Mix, Incidence Report & Menu Engineering.
- APC (Average Per Cover), Ticket Size & Sales Drop analysis (Month-on-Month & Year-on-Year).
- Present Monthly Sales & Cost Analysis to Management with actionable insights to improve revenue.

2. Cost Control & Inventory Management
- Maintain and verify Monthly Inventory Records for all Food & Beverage items across outlets and warehouse.
- Conduct Actual vs. Ideal Consumption Analysis to identify variances.
- Monitor and control:
- Overstock situations.
- Slow-moving inventory.
- Shrinkage & stock discrepancies.




- Finalize and execute Stock Audit Schedules as per Company SOP.
- Conduct:
- Surprise Cash & Stock Audits.
- Over-Stock Audits (Twice Weekly) at outlets & warehouse.
- Circulate weekly MIS reports to concerned stakeholders.

3. Theft Prevention & Waste Control
- Identify pilferage, wastage, and operational leakages through systematic analysis.
- Investigate variance between theoretical food cost and actual consumption.
- Recommend and implement corrective measures to reduce waste and spoilage.
- Strengthen internal controls to ensure zero tolerance for theft and unauthorized usage.

4. POS & System Control
- Verify Discounts, Voids & Cancelled Bills in POS systems on a daily basis.
- Update Menu, Pricing & Promotional Deals in POS.
- Coordinate with Software Team to optimize reporting systems.
- Ensure system-generated reports are accurate, productive, and audit-ready.
