Chef de Partie — Indian & Tandoor

About the role

We are looking for a skilled and passionate Chef de Partie specialising in Indian cuisine and tandoor cookery to join our kitchen brigade. You will take full ownership of your section — from prep and mise en place through to service — while maintaining the highest standards of food quality, consistency, and hygiene.

This is a hands-on role suited to someone who takes pride in authentic Indian flavours and can work confidently in a rapid-paced kitchen environment.

Key responsibilities
- Operate the tandoor oven to produce naans, rotis, tandoori kebabs, tikkas, and marinated proteins to a consistently high standard
- Prepare authentic Indian curries, gravies, biryanis, and dry dishes as per recipe specifications
- Set up and maintain full section mise en place before and during service
- Ensure food safety and hygiene standards are upheld at all times in line with local regulations (FSSAI/HACCP)
- Monitor portion control and manage stock to reduce wastage




- Work closely with the Sous Chef or Executive Chef to maintain smooth kitchen operations
- Support and guide junior kitchen staff working on the section
- Assist with stock rotation, ordering, and storage as directed

What we’re looking for
- Minimum 10 years of kitchen experience, with at least 4-5 years on an Indian or tandoor section
- Strong working knowledge of regional Indian cuisines and spice profiles
- Hands-on experience handling high-volume tandoor service
- Ability to work efficiently under pressure during peak service periods
- Good understanding of food hygiene and safety practices
- A reliable team player with a positive attitude
- Culinary diploma or equivalent qualification preferred but not essential
