Food Preparation & Cooking
- Prepare and cook a variety of tandoor dishes including naan, roti, kulcha, kebabs, tikkas, and tandoori curries.
- Marinate meats, poultry, seafood, and vegetables according to standard recipes and portion controls.
- Operate and maintain the tandoor oven (coal, wood, or gas) at appropriate temperatures.
- Ensure food is cooked evenly, retaining authentic flavour, texture, and presentation.

Quality & Hygiene
- Maintain high standards of food quality, taste, and consistency at all times.
- Follow food safety, hygiene, and sanitation standards as per hotel and FSSAI guidelines.
- Ensure proper storage, labelling, and handling of raw and cooked food items.
- Regularly clean the tandoor area, utensils, and equipment.

Kitchen Operations
- Coordinate with the Head Chef and kitchen team for smooth service operations.
- Assist in menu planning and development of tandoor specialties.
- Monitor food wastage and ensure efficient use of ingredients.
- Manage mise en place for smooth and timely service during peak hours.

Inventory & Cost Control




- Check daily requirements of raw materials and place requisitions as per par stock levels.
- Control portion sizes to minimize wastage and maintain food cost.
- Ensure proper storage of charcoal, fuel, and tandoor tools.

Safety & Maintenance
- Follow fire and safety procedures while operating the tandoor.
- Report equipment issues or maintenance needs immediately.
- Ensure safe handling of skewers, heat-resistant gloves, and tools.

Teamwork & Training
- Train and guide commis and helpers working in the tandoor section.
- Maintain discipline and a professional work environment in the kitchen.
- Support other kitchen sections when required.

Guest Satisfaction
- Customize dishes as per guest preferences and special dietary requests.
- Ensure timely preparation to meet service standards and guest expectations.
