Role Description

This is a full time, on-site role based in Hyderabad for a Cost Controller. The Cost Controller will monitor and analyse financial data to manage costs effectively. Daily tasks include implementing cost-control processes, analysing cost variances, preparing financial reports, and ensuring adherence to budget constraints. Collaboration with other departments to optimise expenditure and improve financial efficiency will be essential.

Key Responsibilities

1. Food Cost Management

Maintain outlet-wise and consolidated food cost percentages within approved benchmarks.

Monitor daily theoretical vs actual consumption.

Identify pilferage, wastage, and portion deviations.

Submit weekly and monthly cost analysis reports to management.

2. Recipe and Menu Engineering

Develop and update standardised recipe costing sheets.

Ensure portion control across outlets.

Conduct contribution margin analyses for all SKUs.





Recommend price adjustments based on raw material price changes.

Support costing for new menu launches.

3. Inventory and Stock Audits

Perform structured physical audits (daily/weekly/monthly cycle counts).

Monitor slow-moving and non-moving inventory.

Ensure FIFO / FEFO compliance.

Reduce expiry and wastage losses.

Maintain standardised par levels for all outlets.

4. Procurement and Vendor Management

Benchmark raw material prices across vendors.

Negotiate contracts to optimise purchasing costs.

Track purchase price variances.

Validate purchase orders, goods receipt notes, and invoices.

Identify alternative sourcing options for high-cost ingredients.

5. Central Kitchen and Outlet Control

Monitor yield percentage from central kitchen production.

Audit outlet-level ordering patterns.

Implement SOPs for stock transfer and reconciliation.
