We’re hiring: Senior Sous Chef — RASA, Lucknow
RASA is a 70-seat, evening-led progressive Indian bistro in Lucknow, built around bold food, a strong bar programme and a guest experience that feels warm, confident and contemporary.
As we enter the next phase of RASA, we’re looking for a Senior Sous Chef who can help lead the kitchen on the floor every day — someone who combines strong cooking ability with discipline, organisation and the ability to build a reliable team.
The Role
The Senior Sous Chef will work closely with the Culinary Director and will be responsible for the day-to-day execution of the kitchen.
Key responsibilities include:
• Leading kitchen operations during prep and service
• Maintaining consistency in taste, presentation and portioning
• Supervisising and developing the kitchen brigade across tandoor, burner, assembly and prep sections
• Ensuring mise-en-place and station readiness before every service
• Managing service flow, ticket times and communication between sections
• Maintaining recipe, yield and portion-control standards




• Supporting food-cost and wastage control
• Monitoring stock levels, storage and kitchen organisation
• Maintaining high standards of hygiene, food safety and cleanliness
• Conducting daily tastings and quality checks
• Helping train, evaluate and develop junior chefs
• Taking operational charge of the kitchen in the Culinary Director’s absence
• Supporting menu trials, specials and new-product development
Who We’re Looking For
We would like to meet chefs who have:
• Robust experience in premium restaurants, modern Indian kitchens or quality-driven hospitality operations
• Solid knowledge of Indian cooking techniques, ingredients and kitchen fundamentals
• Experience managing a multi-section kitchen during busy service
• Strong leadership and people-management ability
• Good understanding of food costing, wastage and inventory discipline
• The ability to work calmly and decisively under pressure
