About Brine
Brine is a modern restaurant and bar built around a simple idea: do things with intention.

We’re looking for a General Manager who can help build the kind of restaurant we want Brine to be: high standards, great hospitality, a strong team and a place people genuinely want to come back to.

The Role
The General Manager is at the centre of how Brine operates and how it feels.
You’ll own the day-to-day running of Brine, from service and operations to guest experience, team culture and standards. You’ll need to be equally comfortable looking at a P&L;, fixing an operational gap, dealing with a difficult guest and spending time with the team on the floor.
This is a role for someone who understands that good hospitality starts with how you treat your own people.

What You’ll Own
Guest Experience
- Set the tone for how guests are welcomed, looked after and remembered




- Be present on the floor and understand what is happening across every part of the restaurant
- Handle difficult situations calmly and with good judgement
- Build relationships with regulars and make first-time guests want to come back
- Look for opportunities to go beyond what is expected when it matters

Operations & Systems
- Own the day-to-day running of the restaurant and bar
- Build and maintain the systems and processes that keep service consistent
- Work across rosters, SOPs, checklists, inventory, cost controls and daily operations
- Identify where things are relying on memory or individual effort and build better systems around them
- Work closely with the kitchen and bar teams to make sure the entire experience works as one
- Keep the restaurant audit-ready and maintain high standards across hygiene, safety and compliance
