Job Description: Commis Chef - Chinese Cuisine

Location: Tamak, Malad
Department: Kitchen Operations
Reports to: Sous Chef / Chef de Partie

Role Overview

We are seeking a disciplined and detail-oriented Commis Chef (Chinese Cuisine) to support the kitchen team in delivering consistently high-quality dishes. This role is ideal for individuals with foundational experience in Indo-Chinese and Oriental preparation, looking to grow within a structured, professional kitchen workplace.

You will be responsible for preparation, station upkeep, and assisting in service execution, while adhering to Tamak’s standards of quality, hygiene, and consistency.

Key ResponsibilitiesFood Preparation & Execution
- Assist in the preparation of Chinese and Indo-Chinese dishes as per standardized recipes
- Ensure consistency in taste, texture, and presentation:
- Prepare sauces, bases, stocks, and marinades under supervision
- Execute basic cooking tasks including stir-frying, blanching, and sautéing

Kitchen Operations
- Maintain clean, organised, and efficient workstations at all times




- Follow daily prep lists and service instructions from senior chefs
- Ensure proper portioning and mínimal wastage:
- Assist in receiving, storing, and rotating stock (FIFO method)

Hygiene & Safety
- Adhere strictly to food safety and hygiene standards (FSSAI compliance):
- Ensure proper handling and storage of raw materials
- Maintain personal hygiene and kitchen discipline at all times

Team Collaboration
- Work closely with CDP and Sous Chef to ensure smooth service
- Support team members during peak hours
- Maintain a positive, learning-oriented attitude
- 1-3 years of experience in a Chinese / Indo-Chinese kitchen:
- Exposure to busy casual dining or premium dining kitchens preferred

Skills
- Basic understanding of:
- Wok cooking techniques
- Sauces (soy, oyster, chilli-based preparations)
- Knife skills and ingredient preparation
- Ability to work in a fast-paced, high-pressure environment
