Role Summary

A Continental Chef prepares and cooks dishes from European cuisine — including French, Italian, Spanish, and other Western styles — in hotels, restaurants, or catering kitchens.

Key Responsibilities
- Prepare and cook _Continental cuisine_ items (soups, sauces, pastas, grills, roasts, salads, desserts).
- Follow standardized recipes to maintain quality and taste.
- Ensure proper plate presentation and portion control.
- Coordinate with kitchen team (sous chefs, Commi 1 & 2, stewards).
- Manage food stocks and ensure FIFO (first in, first out) usage.
- Monitor food quality, temperature, hygiene and sanitation standards.
- Assist with menu planning and daily specials.
- Train junior kitchen staff and Commis chefs.

Skills & Competencies
- Strong knowledge of European cooking techniques (sautéing, roasting, braising).
- Knife skills and knowledge of ingredient handling.
- Ability to work in a high‑pressure kitchen environment.
- Time management and teamwork.
- Food safety & hygiene awareness (HACCP, ISO standards).





Experience & Qualifications
- Diploma or certificate in culinary arts / hotel management.
- Preferred 2-5 years experience in Continental cuisine.
- Knowledge of modern plating and presentation.

Role Summary

A Chinese Commis 1 Chef is a _junior chef_ focused on assisting with the preparation, cooking, and execution of Chinese cuisine under supervision.

Key Responsibilities
- Prepare ingredients for Chinese dishes (chopping, marinating, cleaning).
- Assist in cooking staple items: stir‑fries, dim sum, noodles, rice, sauces.
- Follow exact recipes and cooking methods (wok handling, steaming).
- Maintain cleanliness and organization of the Chinese kitchen section.
- Keep track of inventory and requisition ingredients.
- Ensure all equipment (wok burners, steamers) are cleaned and maintained.
- Support higher chefs (Chef de Partie / Sous Chef) during service rush.
