They develop, manage, and audit food safety systems (HACCP), test shelf-life, and optimize food production processes, including fermentation, to enhance safety and shelf stability. Key Responsibilities and Roles
- Quality Control & Testing: Perform microbiological analysis on samples (raw materials, finished products, packaging) to ensure adherence to safety standards, using methods like culture techniques and, often, molecular identification.
- Safety Assurance & Regulatory Compliance: Monitor, implement, and maintain food safety systems (such as HACCP) and ensure compliance with FDA/EFSA regulations.
- Pathogen Detection: Detect and control harmful microorganisms that cause foodborne illness to prevent outbreaks.
- Spoilage Reduction & Shelf-Life Studies: Identify organisms that cause deterioration, odors, or texture changes, helping to extend product shelf life.




- Product Development & Fermentation: Utilize beneficial microorganisms for producing fermented foods (yogurt, cheese, wine) and developing food additives like enzymes.
- Environmental Monitoring: Check manufacturing environments for hygiene and cleanliness.
