Kargeen Restaurant is looking for an experienced and skilled Dosa Master to join our kitchen team. The ideal candidate should have strong expertise in preparing different varieties of dosas with consistent taste, texture, and presentation while maintaining excellent hygiene and kitchen standards.
Responsibilities
- Prepare and cook different varieties of dosa according to restaurant standards.
- Maintain consistent taste, texture, crispness, and presentation.
- Prepare and manage dosa batter and ensure proper fermentation.
- Prepare accompaniments such as chutneys, sambar, and other required items.
- Maintain the dosa station and ensure all ingredients are properly prepared and available.
- Ensure proper portion control and minimize food wastage.
- Maintain cleanliness and hygiene of the work station and equipment.
- Follow food safety and sanitation standards.
- Coordinate with other kitchen staff for smooth and timely service.
- Handle high-volume orders efficiently during peak hours.
- Assist with menu preparation and introduce new dosa varieties when required.
Requirements
- Minimum 2–5 years of experience as a Dosa Master or South Indian Cook.
- Strong knowledge of traditional South Indian dosa preparation.
- Experience preparing varieties such as Masala Dosa, Plain Dosa, Ghee Roast, Set Dosa, Onion Dosa, and other specialty dosas.
- Good knowledge of batter preparation and fermentation.
- Ability to maintain consistency during high-volume service.
- Strong knowledge of kitchen hygiene and food safety.
- Ability to work independently and as part of a team.
- Hardworking, punctual, and disciplined.
- Willingness to work flexible shifts, weekends, and holidays.
