Job Summary The Bakery Commis II is responsible for assisting in the preparation and production of breads, pastries, cakes, desserts, and other bakery products according to the hotel's standards. The position supports senior chefs in daily bakery operations while maintaining high standards of quality, hygiene, and food safety.

Key Responsibilities

- Prepare and bake breads, rolls, croissants, Danish pastries, cakes, cookies, and other bakery products.

- Assist the Chef de Partie and senior pastry chefs with daily production.

- Measure and mix ingredients accurately according to recipes and standard procedures.

- Operate bakery equipment such as ovens, mixers, proofers, and dough sheeters safely.

- Maintain consistent quality, taste, texture, appearance, and portion sizes.

- Assist with buffet, restaurant, banquet, and room-service bakery requirements.

- Prepare mise en place for daily production.

- Maintain cleanliness and organization of the bakery section.

- Follow hotel hygiene, HACCP, and food-safety standards.

- Check the quality and freshness of ingredients before use.

- Store food products properly and minimize wastage.





- Assist with stock rotation and inventory control.

- Follow proper personal hygiene and grooming standards.

- Support other kitchen sections when required.

- Perform any other duties assigned by the Pastry Chef or management.

Skills & Qualifications

- Diploma or certificate in Bakery, Pastry, or Culinary Arts preferred.

- Previous experience in a hotel bakery or pastry kitchen is an advantage.

- Basic knowledge of baking methods, dough preparation, fermentation, and pastry production.

- Good teamwork and communication skills.

- Ability to work in a rapid-paced hotel environment.

- Knowledge of food hygiene and safety procedures.

- Willingness to work shifts, weekends, and holidays.
