About the Role:

We are a growing startup cafe looking for an energetic and skilled Chinese Chef / Chef de Partie (CDP) to independently take charge of our Chinese section.

In this role, you will manage the Chinese station from scratch—including signature sauces, base preparations, and high-speed line cooking during peak hours. A dedicated kitchen helper will be provided to assist with prep, chopping, and cleaning.

Key Responsibilities:

- From-Scratch Prep: Prepare all signature Chinese sauces, pastes, and gravies (Schezwan, Manchurian, Hot Garlic, Chilli paste, stocks) maintaining consistent taste and quality.
- Line Cooking: Handle high-heat wok cooking for starters, gravies, fried rice, and noodles with fast ticket turnaround times (10–12 minutes).
- Helper Management: Direct and supervise the kitchen helper with daily mise-en-place (vegetable chopping,



chicken portioning, boiling noodles/rice).
- Station Ownership: Manage raw material par levels, avoid food wastage, and maintain stock rotation (FIFO).
- Kitchen Hygiene: Maintain strict workstation cleanliness, food safety standards, and proper storage of prepped batches.

Requirements:

- Experience: 3 to 6 years of hands-on experience as a Chinese Cook, Commis I, or Chinese CDP in a standalone cafe, restaurant, or cloud kitchen.
- Wok Mastery: Strong expertise in high-flame wok tossing, oil control, and Indo-Chinese / Asian flavor profiles.
- Consistency: Ability to deliver the exact same taste and portion size across shifts.
- Work Ethic: Punctual, hygienic, disciplined, and capable of working in a fast-paced cafe kitchen.
