Job Summary:

The Appam Maker is responsible for preparing high-quality Kerala-style appam and related breakfast items according to the restaurant's recipes, quality standards, and presentation requirements. The position requires consistency in taste, texture, portion size, and timely preparation during busy service periods.

Key Responsibilities:

- Prepare and cook appam according to the restaurant's standard recipe and procedures.

- Prepare, ferment, and maintain appam batter properly.

- Ensure appam has the required shape, softness, crisp edges, colour, and taste.

- Prepare appam continuously and efficiently during breakfast and other service periods.

- Maintain proper mise en place and ensure sufficient batter and ingredients are available.

- Check the quality and freshness of rice, coconut, yeast, salt, and other ingredients.

- Maintain cleanliness and hygiene of the appam station, utensils, cooking equipment, and surrounding kitchen area.

- Follow food safety, sanitation, and safe cooking practices.

- Minimize food wastage and use ingredients efficiently.

- Inform the Chef/Supervisor about ingredient shortages or equipment problems.





- Follow portion-control and presentation standards.

- Assist with other Kerala/South Indian breakfast preparations when required.

- Follow all instructions and SOPs issued by the Chef and management.

Required Skills & Qualifications:

- Previous experience as an Appam Maker preferred.

- Good knowledge of traditional Kerala appam preparation.

- Ability to prepare consistent-quality appam in large quantities.

- Knowledge of batter fermentation and preparation techniques.

- Positive understanding of kitchen hygiene and food safety.

- Ability to work in a fast-paced restaurant environment.

- Good teamwork and communication skills.

- Physically fit and able to stand for extended periods.

Pay: ₹15,000.00 - ₹20,000.00 per month
