1. Outlet Operations & Sales

· Own sales and operational performance across assigned Juice Shop outlets.

· Drive daily sales against outlet-wise targets and improve footfall, conversion, AOV and repeat business.

· Track performance by outlet, daypart, product category and sales channel; act quickly on weak trends.

· Ensure smooth opening, peak-hour and closing operations.

2. Product & Juice Shop Standards

· Ensure 100% adherence to approved recipes, portion sizes and product specifications.

· Maintain consistency in taste, freshness, presentation and serving standards.

· Ensure availability of fruits, ingredients, beverages and packaging without overstocking perishables.

· Minimise wastage and control over-portioning.

3. Customer Experience

· Own customer experience across outlets, with focus on service speed, order accuracy and product quality.

· Track customer complaints and online reviews; drive timely closure of recurring issues.

· Build a clean, friendly and consistent Juice Shop experience that encourages repeat visits.

4. Cost & Profitability

· Own food cost, wastage, manpower cost and outlet contribution.

· Control fruit/ingredient wastage through forecasting, stock rotation and portion discipline.

· Monitor discounts, complimentary orders, voids and operational leakages.

· Review outlet P&L; and implement corrective actions to improve margins.

5. People & Store Leadership

· Lead and develop Branch Managers / Outlet Managers / Floor Managers.

· Ensure the right manpower is deployed for each outlet and peak period.

· Build a strong second line of outlet leadership and internal talent pipeline.





· Drive training on products, recipes, hygiene, selling, service and operating standards.

· Address performance, attendance, discipline and attrition issues.

6. Hygiene, Food Safety & Compliance

· Maintain uncompromising standards of hygiene, cleanliness and food safety.

· Ensure correct storage and handling of fresh fruits, dairy, juices and perishables.

· Conduct regular operational and hygiene audits and close critical deviations immediately.

7. Inventory & Controls

· Maintain optimum inventory levels and monitor daily consumption, stock variance and wastage.

· Ensure FIFO/FEFO and proper storage/cold-chain practices where applicable.

· Control cash, POS, discounts and inventory leakages.

· Coordinate with Supply Chain/Procurement for uninterrupted product availability.

8. New Outlet Openings

· Support new Juice Shop openings from operational readiness through stabilisation.

· Coordinate manpower, training, stock, equipment, SOP readiness and launch execution.

IDEAL CANDIDATE

· 8–10 years of experience in QSR, café, juice/beverage, bakery or multi-outlet F&B; multi-outlet experience is mandatory.

· Strong understanding of sales, outlet P&L;, food cost, wastage and manpower productivity.

· Hands-on experience with fresh/perishable products is preferred.

· Strong people leadership, commercial thinking and outlet execution capability.

· Comfortable working in a fast-paced, high-volume retail environment with solid analytical and problem-solving skills.

Pay: ₹1,200,000.00 - ₹1,400,000.00 per year
