Key Responsibilities

The Kitchen Stewarding Manager is responsible for planning, organizing, and controlling the overall stewarding operations to ensure the highest standards of cleanliness, hygiene, and operational efficiency in all kitchen and back-of-house areas. The role plays a critical part in food safety compliance, cost management, equipment upkeep, manpower planning, and sustainability initiatives.

This position ensures uninterrupted kitchen operations through systematic cleaning schedules, inventory management, and team leadership.





Ensure compliance with:

HACCP standards

FSSAI regulations

Local municipal health laws

Maintain sanitation SOP manuals.

Conduct internal hygiene audits weekly.

Ensure proper chemical dilution ratios.

Oversee deep cleaning schedules (daily / weekly / monthly / quarterly).

Train staff on cross-contamination prevention

Maintain par stock levels for:

Crockery, Cutlery, Glassware, Cleaning chemicals

Control breakage percentage within approved limits.

Conduct monthly inventory reconciliation.

Ensure proper storage and labeling.

Track asset movement between outlets banquet halls.

Manpower Planning Training

Recruit and onboard stewarding staff.

Prepare duty rosters aligned with business volume.

Conduct daily briefings and shift allocations.
