- Overseeing Processing: Monitor cleaning, peeling, gutting, and grading lines to match buyer specifications.
- Managing Staff: Assign daily shifts to workers, train recent hires, and track attendance.
- Maintaining Flow: Keep production moving smoothly to meet daily export quotas and shipping deadlines.
- Equipment Care: Check processing machinery, weighing scales, and blast freezers daily to prevent breakdowns.

Quality & Safety Responsibilities

- Hygiene Control: Enforce strict sanitation rules, personal hygiene, and clean uniform policies on the floor.
- Temperature Monitoring: Track cold storage, ice levels, and core product temperatures to prevent spoilage.
- Regulatory Compliance: Follow food safety systems like HACCP (Hazard Analysis Critical Control Point) and export standards.
- Waste Reduction: Minimize product damage and trim waste during the filleting and packing stages.
