Role Description The Retort Operator is a full-time, on-site role based in Port Blair, responsible for operating and monitoring retort equipment used in the thermal processing of canned sardines. The role includes setting up retort systems, loading and unloading racks, adjusting temperature and pressure settings, and ensuring that cooking cycles meet established safety and quality standards.

The Retort

Operator records production data, checks gauges and controls, and performs basic equipment inspections to identify irregularities or potential issues. Daily tasks involve following sanitation procedures, adhering to safety regulations, collaborating with quality control staff,



and working closely with the production team to meet output targets. The role may also include routine cleaning of equipment and work areas and assisting with minor troubleshooting under supervision.

Qualifications

- Experience in operating industrial food processing or retort equipment, or similar machinery in a manufacturing environment.
- Knowledge of basic food safety, hygiene, and sanitation practices, preferably within seafood or canned food operations.
- Ability to follow detailed operating procedures, production schedules, and safety guidelines with strong attention to detail.
- Physical ability to stand for extended periods, handle loading/unloading tasks, and work in a warm, industrial environment.
- Basic recordkeeping and documentation skills, including logging processing parameters and production data accurately.
- Strong teamwork and communication skills, with the ability to coordinate effectively with production and quality control staff.
- Willingness to work shifts, weekends, or overtime as required by production demands.
- Prior experience in food canning, seafood processing, or a related industry is an advantage; vocational training in mechanical or industrial operations is beneficial.
