Role OverviewThe General Manager will have end-to-end ownership of the restaurant’s operations, commercial performance, guest experience, and team effectiveness. The role requires a commercially astute and hands-on leader who can translate business objectives into robust outlet-level execution while maintaining consistently high standards across service, food, beverage, hygiene, and hospitality.
The GM will be accountable for revenue growth, profitability, cost control, team productivity, guest satisfaction, and overall outlet performance.
Key Responsibilities1. Business & P&L; Ownership
- Own the outlet’s P&L;, revenue, profitability, and key commercial metrics.
- Drive sales across food, beverage, events, delivery, and other revenue channels.
- Monitor daily, weekly, and monthly performance against budgets and targets.
- Analyse sales mix, average transaction value, covers, table turns, discounts, voids, complimentary bills, and contribution margins.
- Develop and execute strategies to improve revenue, profitability, and overall outlet productivity.
2. Restaurant Operations
- Ensure seamless day-to-day functioning of the outlet across FOH, BOH, bar, reservations, delivery, and guest relations.
- Maintain uncompromising standards of service, food quality, presentation, hygiene, ambience, and hospitality.
- Conduct daily opening, operational, and closing checks.
- Ensure all SOPs are consistently implemented and audited.
- Identify operational gaps proactively and drive timely corrective action.
3. Guest Experience
- Own the overall guest journey from reservation and arrival to service and departure.
- Personally handle escalated guest concerns and ensure effective service recovery.
- Track guest feedback, online reviews, complaints,
and recurring service issues.
- Drive a culture of warm, attentive, and personalised hospitality.
- Ensure the restaurant consistently delivers the intended brand experience.
4. Sales & Revenue Generation
- Lead the team in achieving daily and monthly sales targets.
- Drive upselling and cross-selling across food, cocktails, beverages, premium products, and experiences.
- Maximise weekend, event, match-screening, celebration, and peak-hour revenue opportunities.
- Work closely with the marketing team to execute local activations and promotional campaigns.
- Build strong relationships with corporates, communities, influencers, event partners, and local businesses to generate incremental business.
5. People & Team Leadership
- Lead, coach, motivate, and develop the entire outlet team.
- Ensure optimum manpower deployment and productivity across shifts.
- Conduct regular briefings, performance reviews, training sessions, and feedback discussions.
- Maintain strong discipline, grooming, attendance, and professional conduct standards.
- Identify high-potential team members and create development pathways.
- Ensure staffing requirements are proactively planned, particularly for weekends and high-demand periods.
6. Food, Beverage & Inventory Control
- Maintain strict control over food and beverage costs, wastage, pilferage,
and stock variance.
- Ensure regular physical stock counts and reconciliation.
- Monitor bar inventory, high-value items, breakage, wastage, and consumption.
- Ensure proper receiving, storage, portion control, and FIFO practices.
- Work closely with the Chef and Kitchen team to maintain food quality and consistency.
- Ensure all procurement follows approved processes and authorised POs.
7. Compliance & Controls
- Ensure adherence to all statutory, food safety, fire safety, licensing, and company compliance requirements.
- Maintain proper documentation, checklists, registers, and audit records.
- Ensure strict cash-handling and billing controls.
- Monitor complimentary bills, discounts, cancellations, voids, NCs, and other revenue leakages.
- Ensure POS and reservation systems are correctly utilised by the team.
8. Brand Standards & Marketing Execution
- Ensure the outlet consistently reflects the brand’s positioning, visual identity, service philosophy, and operating standards.
- Execute brand campaigns, events, match screenings, promotions, and local marketing initiatives effectively.
- Ensure all in-store communication and promotional assets are correctly displayed and maintained.
- Provide regular market intelligence and competitor insights to the central team.
9. Reporting & Performance Management
- Review daily sales and operational reports.
- Submit accurate MIS and performance updates within defined timelines.
- Track outlet KPIs and create action plans for performance gaps.
- Conduct regular business reviews with the Operations / Business Head.
- Maintain clear accountability across department heads and managers.
