Job Summary
We are seeking experienced and skilled Junior Sous Chefs to join our Pastry, Bakery, and Viennoiserie team at Bakingo in Hoskote, Bengaluru. In this role, you will act as a key anchor in the kitchen, working closely with the Sous Chef and Executive Chef to produce our signature high-quality cakes, artisanal breads, puff pastries, and laminated doughs like croissants.
This position is ideal for seasoned pastry professionals who are highly efficient in high-volume daily production—such as mixing complex batters, precise frosting application, and oven management—while eager to master advanced, intricate cake decoration and supervisory skills under leadership mentorship.
Core Responsibilities
Daily Production & Baking Excellence
Lead and assist in the daily high-volume preparation of all dessert, oven, and viennoiserie items.
Mix complex batters, doughs, and fillings according to exact recipe specifications and consistency.
Manage the oven area, ensuring precise baking times, crust development, and temperatures for breads, pastries, and cakes.
Roll, laminate, and shape croissants, puff pastries, and Danish items with consistent quality.
Finishing & Decoration
Apply flawless, uniform frosting, glazes, and crumb coats to specialty cakes and desserts.
Execute clean, intricate piping designs and advanced finishing techniques.
Work under supervision to further refine high-end cake decorating, sugar work, or chocolate skills.
Kitchen Operations & Safety
Maintain a pristine, organized,
and sanitized work station, ensuring team compliance with company SOPs.
Strictly follow and enforce all food safety regulations, FIFO practices, and FSSAI standards.
Monitor ingredient inventory, track wastage, and proactively report shortages to the Sous Chef.
Qualifications & Skills
Experience: 5–7 years of stable experience in a professional pastry kitchen, cloud kitchen, or high-volume commercial bakery.
Education: A degree or certificate in Culinary Arts or Pastry Arts is preferred but not required.
Technical Skills: Strong technical expertise in scaling, mixing methods, laminated doughs, baking science, and precise piping.
Attributes: High attention to detail, strong work ethic, speed, and the ability to efficiently manage tasks under pressure.
Compliance: Excellent understanding of local FSSAI food safety and hygiene regulations.
