Job Summary

We are looking for an experienced Manager – Purchase with 5–8 years of purchasing experience in the hospitality industry. The candidate will be responsible for end-to-end procurement, vendor management, commercial negotiations, inventory coordination, and cost optimization.

The ideal candidate should have strong knowledge of hotel procurement operations and experience working with ERP/procurement systems.

Key ResponsibilitiesProcurement & Purchase Operations

- Process purchase requisitions (PRs) from Kitchen, F&B;, Housekeeping, Maintenance, and other departments.
- Obtain competitive quotations and prepare comparative statements for management approval.
- Issue, track, and close Purchase Orders (POs) through ERP/inventory systems.
- Coordinate with Stores and Receiving teams to verify incoming goods for quality, weight, quantity, and specifications.
- Handle procurement of seasonal and imported F&B; ingredients while following applicable food-safety requirements such as FSSAI.

Vendor & Contract Management
- Source, evaluate, and onboard reliable local and regional suppliers.
- Negotiate pricing, payment terms, volume discounts, and SLAs.
- Conduct periodic vendor performance evaluations based on delivery timelines and product quality.
- Maintain active rate contracts and manage contract renewals on time.





Cost Control & Inventory
- Monitor par stock levels to prevent overstocking, wastage, and shortages.
- Reconcile vendor invoices against POs and GRNs before submitting them to Finance.
- Support Cost Control teams with price variance, waste, and consumption reports.
- Drive year-on-year cost optimization without compromising product quality or guest experience.

Requirements
- Bachelor’s degree in Business Administration, Commerce, Supply Chain Management, or Diploma in Hotel Management.
- 5–8 years of proven purchasing experience in the hospitality industry.
- Experience in hotels, resorts, or multi-outlet restaurant chains.
- Robust commercial negotiation and supplier relationship management skills.
- Hands-on experience with hospitality ERP/procurement software such as SAP, Oracle, Material Control, or Posist.
- Advanced MS Excel skills for data and variance analysis.
- Strong attention to detail and cross-functional communication skills.
- System-oriented, proactive, team-oriented, and results-driven approach.
