About SCANDALous FoodsSCANDALous Foods (ADITOF Pvt. Ltd.) is a one-stop shop for India's most-loved mithais — reengineered into 6-month shelf life, single-serve 95g cups built for the HORECA ecosystem: hotels, restaurants, cafés, cloud kitchens, and Qcom players. We own the post-meal impulse mithai moment.
Today we ship 3 lakh cups a month across 6 cities, manufactured out of our Nasik facility. Tomorrow — a lot more, in a lot more formats.
The RoleYou are the person who takes a "wouldn't it be cool if…" and turns it into a shelf-reliable, HORECA-ready, mass-produced SKU — on brief, on cost, on time.
You'll own our innovation funnel end-to-end: from spotting the next category, to lab benchwork with our consulting chefs and food technologists, to pilot batches, to full-blown scale-up in Nasik. If a product ships from SCANDALous, your fingerprints are on it.
This is not a "recipe writer" role. This is a product-market-manufacturing role.
What you'll own
- Category foresight: Predict the next 3–5 categories SCANDALous should play in — mithai, frozen, ambient, indulgence formats — before the market catches on
- Concept → prototype: Brief and coordinate with consulting chefs, food technologists, flavour houses, and ingredient suppliers to build 20+ prototypes a year
- Product engineering: Nail down texture, shelf life, mouthfeel, taste, aromatics across ambient and frozen formats — not by feel, but by spec
- Pilot to plant: Take a bench-top winner and scale it to Nasik — process definition, machinery selection, yield, costing, QC parameters, and SOPs
- Packaging & format:
Stay ahead on packaging innovation, machinery, and formats — cups, pouches, tubs, frozen packs, single-serve, sharing — with a bias for HORECA & Qcom fit
- Trend engine: Live inside the latest — global culinary trends, food service menus, HORECA insights, quick commerce data, packaging tech, ingredient breakthroughs
- Cost & commercial: Own product cost sheets and margin gates — no product moves to launch without hitting them
- Cross-functional glue: Work shoulder-to-shoulder with Founder, Sales, Ops, QC, and Marketing to make sure launches actually land
You are
- Technically trained — B.Tech / M.Tech / M.Sc in Food Technology, Food Science, Dairy Tech, or equivalent or a chef with years of technical experience.
- 3–5 yrs in NPD in FMCG food, frozen foods, dairy, bakery, desserts, or QSR — with real SKUs launched under your name
- Deep, working understanding of frozen food behaviour, ice-crystal control, freeze-thaw, staling, moisture migration, water activity, emulsions, shelf-life extension, natural preservation, and clean-label formulation
- Have taken products from 10-batch pilot to 10,000-unit production runs — and know exactly where scale-up breaks
- Fluent in the language of consulting chefs AND food technologists — and can translate between them
- Obsessed with eating, tasting,
and dissecting food — Michelin to street to supermarket shelf
- Sharp on packaging machinery, filling lines, sealing tech, cold chain, and ambient logistics
- Have a strong POV on where Indian food formats are going — and receipts to back it
Bonus points
- Have launched a shelf-stable Indian sweets / desserts / dairy SKU
- Have worked with a food manufacturing co, cloud kitchen, QSR chain, or Qcom-first brand
- Have hands-on experience with frozen desserts, mousses, or single-serve indulgence formats
- Understand FSSAI, nutritional labelling, and export-grade compliance
- What we don't want
- A pure R&D; scientist who doesn't want to see a shop floor
- A chef who can't read a shelf-life study
- Someone who needs a 40-person team to ship one SKU
- "Reference recipe" copy-paste innovators
