Assistant Production Manager / Production Manager – Food Manufacturing

We are looking for a hands-on production professional with relevant experience in biscuits, cookies, bakery, cereals, snacks or similar food manufacturing.

This role is not just for production supervision. The person should be capable of gradually taking ownership of production planning, manpower, output, wastage, process control and daily factory execution.

Key Responsibilities

- Prepare and execute daily and weekly production plans based on orders, inventory and dispatch requirements.
- Manage shop-floor production across mixing, dough preparation, forming, baking, cooling and packing operations.
- Ensure achievement of planned output, productivity and dispatch commitments.
- Allocate manpower effectively across production lines and shifts.
- Monitor and control yield, wastage, rework, breakage and process losses.
- Track plan vs actual production and identify reasons for shortfalls.
- Monitor machine downtime, changeovers and production bottlenecks and take corrective action.
- Coordinate with QC, Stores, Maintenance, Packing and Dispatch teams for smooth production.
- Ensure availability of raw materials and packaging materials as per the production plan.
- Maintain process consistency for products such as cookies, biscuits, rusk, cereals and related products.
- Troubleshoot issues relating to dough consistency, mixing, baking, colour, texture, moisture, crispness, breakage and product variation.
- Support new-product trials and scale-up from trial batches to commercial production.




- Maintain proper batch records, production records, process parameters and shift handovers.
- Ensure compliance with factory hygiene, food-safety, sanitation and production SOPs.
- Coordinate basic preventive maintenance and escalate machine issues on time.
- Prepare and maintain a simple daily/weekly production MIS covering:
- Production plan vs actual
- Output
- Wastage/yield
- Downtime
- Manpower
- Rework
- Key production issues
- Train and develop supervisors/operators so production does not depend on one individual.
- Be capable of independently managing routine production operations in the absence of the senior production head.

Candidate Profile

- 8–10 years of relevant experience in food manufacturing.
- Strong preference for experience in biscuits, cookies, bakery, rusk, cereals, snacks or similar dry-food products.
- Hands-on knowledge of mixing, forming, baking, cooling and packing processes.
- Understanding of food-production variables such as temperature, time, moisture, dough consistency, formulation variation and process control.
- Experience managing production workers and shop-floor manpower.
- Comfortable working in a hands-on manufacturing environment.




- Ability to analyse production problems rather than merely escalate them.
- Working knowledge of food hygiene, GMP and basic food-safety systems.
- Ability to maintain production records and MIS.
- Valuable coordination and communication skills.

Preferred Qualifications

B.Tech / B.Sc / Diploma in:
Food Technology, Food Science, Dairy/Food Processing, or relevant manufcturing qualification.

Strong practical food-production experience can compensate for formal qualification.

- Production volume and number of workers previously handled.
- Examples of reducing wastage or improving yield.
- How they handle production shortfalls and machine downtime.
- How they plan manpower across multiple SKUs.
- Troubleshooting of biscuit/cookie/bakery production problems.
- Production MIS and KPIs they have personally managed.
- Examples of new-product commercial scale-up.
- How they would independently run production if their reporting manager were absent.

Pay: ₹35,000.00 - ₹55,000.00 per month
