- 1. Food Preparation & CookingPrepare South Indian dishes according to KNS standard recipes and SOPs.
- Prepare Plain Dosa, Masala Dosa, Cheese Dosa, Uttapam, Idli, Medu Vada and other menu items as required.
- Prepare Sambar, Rasam, Coconut Chutney, Tomato Chutney and other accompaniments.
- Prepare South Indian rice dishes such as Lemon Rice, Curd Rice, Tamarind Rice, etc.
- Ensure proper taste, texture, presentation and portion size of every dish.
- Maintain consistency in taste and quality during every shift.
- 2. Batter PreparationPrepare dosa and idli batter independently.
- Maintain correct proportion of ingredients and proper grinding consistency.
- Monitor fermentation according to temperature and operational requirements.
- Ensure batter is stored, labelled and used appropriately.
- Maintain consistent dosa/idli quality from every batch.
- 3. Kitchen OperationsComplete daily mise-en-place before service.
- Ensure all ingredients and preparations are available before peak hours.
- Manage the South Indian section independently during assigned shifts.




- Ensure orders are prepared accurately and served within the required time.
- Coordinate with other kitchen sections during busy service periods.
- Follow instructions from the Executive Chef / Kitchen Manager.
- 4. Quality & Food SafetyCheck freshness and quality of vegetables, grains, spices and other ingredients.
- Follow proper food handling, storage and preparation procedures.
- Maintain personal hygiene and cleanliness of the work area.
- Follow FSSAI, food safety, hygiene and company SOP requirements.
- Ensure proper storage, labelling and stock rotation using FIFO/FEFO principles.
- Prevent cross-contamination and maintain clean utensils and equipment.
- 5. Cost & Wastage ControlMaintain proper portion control.
- Minimize food wastage and unnecessary consumption of ingredients.
- Use ingredients efficiently and responsibly.
- Inform the supervisor about shortages, spoilage or quality issues.
- Assist in maintaining food cost within company standards.
