Diploma holder in Hotel Management, with 9 - 12 years’ experience in any specialized kitchen

Age

30- 40 years

Well versed in menu planning, cost control with excellent culinary skills.

Job Summary To ensure that the Food Production team provides a consistent quality of food and beverage in the area/shift under his/her control, as per preset standards, in order to maximize customer satisfaction and Company profitability in an atmosphere of high employee morale.

Duties and responsibilities

Ensures adherence to Company standards of food quality, hygiene, preparation and presentation in the kitchens.

Assists the F&B; Manager in menu planning and costing of the kitchen section.

Ensures all the kitchen equipment and machinery is in good working order at all times, in the area of work.

Controls food wastage, without compromising on food quality.





Recommends changes in systems and procedures to increase efficiency and improve service levels.

Co-ordinates with Outlet Manager/F&B; Manager in the operational budgeting process.

Ensures prompt, courteous and accurate service to all the customers to achieve high level of guest satisfaction.

Responsible for maintaining of records/documentation in the area as per operational/control requirements.

Ensures all buffets/food displays, are set up and maintained professionally, as per Company standards.

Ensures the hygiene standards of all kitchen and storage areas, equipment and machinery.

Ensures the quality and availability of raw ingredients at all times for a smooth operation.
