Job Summary The Commis I – Continental is responsible for assisting in the preparation and production of Continental cuisine according to the hotel's recipes, quality standards, presentation guidelines, and food safety procedures. The position supports the Chef de Partie in smooth day-to-day kitchen operations and ensures that all food is prepared efficiently and consistently.

Key Responsibilities

- Assist the Chef de Partie in the daily operation of the Continental kitchen section.

- Prepare and maintain mise en place for breakfast, lunch, dinner, banquets, and other food production requirements.

- Prepare ingredients including vegetables, fruits, meat, poultry, seafood, sauces, stocks, dressings, and garnishes.

- Assist in preparing Continental dishes such as soups, salads, pasta, pizzas, sandwiches, grilled items, vegetables, and basic meat and poultry preparations.

- Follow standard recipes, portion sizes, cooking methods, and presentation standards.

- Ensure proper cooking, seasoning, portioning, and presentation of food.

- Maintain the required quantity of mise en place during service.

- Check the quality and freshness of all ingredients before preparation.





- Follow proper food storage, labeling, dating, and temperature-control procedures.

- Maintain high standards of personal hygiene, food hygiene, and kitchen sanitation.

- Keep the workstation, utensils, equipment, and kitchen area clean and organized.

- Minimize food wastage through proper preparation, storage, and portion control.

- Assist with receiving and storing food supplies as instructed.

- Handle knives, ovens, grills, fryers, mixers, and other kitchen equipment safely.

- Report any equipment problems, food-quality issues, or shortages to the Chef de Partie.

- Assist other kitchen sections when required.

- Follow hotel policies, HACCP procedures, fire and safety regulations, and departmental standards.

- Maintain a professional attitude and effective teamwork with chefs and other hotel departments.

Required Skills

- Basic knowledge of Continental cooking techniques.

- Knowledge of basic sauces, soups, stocks, salads, pasta,
