Job Summary:

We are seeking a highly disciplined and result-driven Kitchen Incharge to oversee all kitchen operations with strict control on quality, hygiene, and cost. The ideal candidate must possess strong leadership, authority, and the ability to enforce standards firmly, ensuring smooth and error-free kitchen functioning at all times.

Key Responsibilities:

- Take full charge of day-to-day kitchen operations, ensuring consistency in food quality and presentation
- Implement and monitor strict cost control measures (food cost, wastage, pilferage, portion control)
- Maintain tight inventory management, including stock audits, FIFO, and variance control
- Enforce discipline, punctuality, and grooming standards among kitchen staff
- Supervise and guide team members with a firm and authoritative approach
- Ensure zero tolerance for negligence, wastage, or misconduct




- Monitor kitchen hygiene and food safety standards as per regulations
- Coordinate with purchase and stores to maintain optimal stock levels
- Prepare and analyze daily/monthly cost reports and kitchen performance metrics
- Handle pressure situations and ensure smooth service during peak operations
- Candidate Profile:
- Proven experience as a cost Controller
- Robust knowledge of food costing, inventory control, and kitchen operations
- A firm, assertive leader who can manage teams with authority and accountability
- Ability to take tough decisions and enforce discipline when required
- Highly organized, detail-oriented, and result-focused
- Good communication and team management skills
- Experience in hotel/resort operations preferred
