We are currently seeking for a Sous Chef . This role offers a balance of hands‑on preparation of high‑quality dishes and operational responsibility for supervising and directing all kitchen personnel.
In this role, you will be responsible for:
- Utilising the staff and resources available, organise and facilitate the highest possible standards of food service.




- Creates and costs menu items within guidelines established by the Executive Chef whilst keeping in line with current trends.
- Actively promotes specialty dishes based on ingredients and/or season.
- Use local produce where available to create innovative menus.
- Encourage clear communication lines and forums between all personnel.
- Train and mentor line staff including Apprentices and Trainees.

To be successful in this role, you must have:
- Successfully completed a trade qualification in commercial cookery;
- Previous experience in a fine dining, resort/hotel based restaurant;
- Previous experience in a supervisory role, preferably at Sous level;
- Experience in Italian Cuisine and fine dining venue (highly regarded);
- Solid interpersonal and communication skills;
- Must have thorough knowledge of security, health and safety requirements in a commercial kitchen environment.
