Job Purpose
The Quality Lead is responsible for driving end-to-end quality assurance, safety, and compliance across the dairy manufacturing plant. This role ensures that all raw materials, in-process stages, and finished products (including paneer, curd, and milk variants) strictly adhere to internal specifications and regulatory standards. The Quality Lead also champions plant hygiene, sanitation protocols, and continuous improvement initiatives to build a robust culture of food safety.
Key Responsibilities / Deliverables / Outcomes / Impact
1. Inspect incoming raw milk, ingredients, and packaging materials upon receipt for quality, receiving temperature, fat/SNF levels, microbial load, adulterants, and packaging integrity.
2. Manage inward material acceptance, perform regular vendor quality evaluations, and review supplier audit metrics to drive continuous supplier development.
3. Prepare laboratory testing SOPs, support the Head of Quality in formulating plant process SOPs, and implement plant and laboratory best practices, including 5S standards.
4. Monitor critical in-process stages for milk variants, paneer, and curd—verifying pasteurisation efficacy, coagulation parameters, fermentation profiles, pH levels, moisture content, and yield.
5. Evaluate finished products against internal specifications and FSSAI standards for sensory quality, packaging integrity, weight/volume compliance, and shelf life, ensuring all logs are updated in online records.
6. Verify FSSAI labelling compliance for every finished product batch before dispatch and authorise final product clearance.

Perform monthly quality benchmarking activities and conduct market supply chain temperature route studies to ensure product quality up to last-mile delivery.
8. Oversee yearly calibration of laboratory equipment and manage routine daily verification of testing instruments, including thermometers, lactometers, pH meters, refractometers, and weighing scales.
9. Ensure batch-production records, test reports, and laboratory logs are complete to ensure data accuracy, strict product traceability, and audit readiness.
10. Address internal quality deviations and customer complaints alongside the CRM/Sales team, leading Root Cause Analysis (RCA) and closing non-conformances (NC) to prevent repeat issues.
11. Track plant quality audit performance and prepare comprehensive MIS reports for Management Review Meetings (MRM) to report performance metrics to executive leadership.
12. Conduct regular hygiene and Clean-In-Place (CIP) inspections across production floors, pipelines, equipment, and cold-chain zones to prevent cross-contamination.
13. Ensure full compliance with FSSAI Schedule 4 guidelines, evaluate pest control service performance, manage waste and effluent standards, and verify potable water quality.
14. Perform workplace safety audits, ensure adherence to company policies, and enforce personnel hygiene protocols, including proper hand-washing, glove/headgear usage, and health declarations.

Monitor daily team performance and deliver structured quality and safety training programs for plant personnel and cross-functional teams.
16. Support Head Quality to design, implement, and maintain the plant Food Safety Management System (FSMS / HACCP / FSSC 22000), defining and monitoring Critical Control Points (CCPs) across all processing lines.
17. Establish and oversee factory-wide environmental monitoring protocols, including microbiological surface swabbing (for Listeria, Salmonella, coliforms), air sampling, and bio-burden tracking in high-care processing areas.
18. Plan and execute periodic mock recall exercises to test batch traceability speed, update product recall protocols, and lead technical management during food safety emergencies.
19. Serve as the primary technical contact for government regulators (FSSAI officials), statutory auditors, third-party certification bodies, and key enterprise customer audit teams.
20. Establish standard operating procedures for safe product rework/re-processing, monitor quality-related product scrap/yield losses, and track the Cost of Poor Quality (COPQ) to drive operational process improvements.
