MACHINE OPERATOR (VACUUM FRYING LINE)
1. ROLE OVERVIEW We are seeking a disciplined, hands-on Machine Operator to take full ownership of our core processing line at the Magadi Road manufacturing facility. The role involves operating and monitoring the Vacuum Fryer, Blanching Unit, and Blast Freezer systems to ensure daily output targets, product texture, yield, and food safety standards are consistently met. The operator will be supported by floor helpers.2. KEY RESPONSIBILITIES Line Operations & Output Management:• Operate the end-to-end processing sequence: Blanching Unit → Blast Freezing → Vacuum Frying Line.• Hit daily and shift production volume targets while maintaining product crispness, color, and low oil content.• Manage oil heating, continuous vacuum build-up, de-oiling centrifuge cycles, and product unloading.Parameter & Process Control:• Accurately set and monitor critical process parameters: vacuum pressure (mmHg / bar), frying temperature, cycletime, oil recovery levels, and freezing duration.• Maintain strict temperature curves for blanching and blast freezing prior to vacuum processing.Floor Helper Supervision:• Direct and coordinate 2–4 floor helpers for raw material preparation, tray arrangement, batch loading/unloading,and finished product transfer to packing.• Ensure helpers follow hygiene, safety, and operational discipline on the floor.Maintenance, Hygiene & Safety:• Perform daily pre-operational machine checks, oil level monitoring, gasket/seal inspections, and vacuum pump checks.• Identify mechanical abnormalities, vacuum drops, or unusual vibrations and troubleshoot immediately.• Execute daily line sanitation,



CIP/COP protocols, oil filtration, and waste oil disposal in adherence with FSSAI and GMP standards.
Batch Records & Documentation:• Maintain accurate log sheets: batch run times, raw material input vs. finished output, downtime reasons, anddaily utility usage.
3. QUALIFICATIONS & REQUIREMENTS
• Education: ITI Certificate in Mechanical / Fitter / Electrical / RAC / Food Processing, or equivalent Diploma.Designation: Machine Operator – Food Processing

Reporting To: Production Manager / Plant Head

• Experience: 1 to 3 years of hands-on experience in food processing, thermal lines, industrial fryers, or blastfreezer operations.
• Technical Skills: Solid understanding of vacuum pumps, pressure gauges, pneumatic valves, temperaturecontrollers, and electrical panels.
• Leadership: Demonstrated ability to coordinate and lead un-skilled/semi-skilled floor workers effectively.
• Language: Proficiency in Kannada (essential for shop floor coordination) + basic English or Hindi for logs and checklists.
• Location / Commute: Candidates residing within easy commuting distance of Magadi Road / Machohalli /Peenya are strongly preferred.
4. WORK SCHEDULE & COMPENSATION• Work Schedule: 6 Days a week (Monday to Saturday / Shift-based operations).
• Salary: Competitive based on experience and technical assessment (₹16,000 – ₹20,000 / month gross).• Statutory Benefits: PF, ESI
