Sous Chef – Garde Manger

Role Overview

We are looking for a passionate and skilled Sous Chef – Garde Manger to lead our Cold Kitchen operations and deliver high standards of food quality, presentation, hygiene, and consistency.

Key Responsibilities

- Lead daily Garde Manger / Cold Kitchen operations and ensure smooth service.
- Oversee preparation of salads, cold appetizers, sandwiches, canapés, dressings, cold cuts, pâtés, terrines, and other cold preparations.
- Ensure excellent mise-en-place, plating, portion control, and presentation.
- Supervise, train, and allocate duties to the kitchen team.
- Monitor food safety, HACCP, hygiene, storage, FIFO, and wastage control.
- Coordinate requisitions, inventory, and daily production requirements.
- Support buffets, banquets, events, and menu development.
- Maintain cleanliness and upkeep of the Garde Manger section and equipment.

Shift & Reporting Duties




- Work on rotational shifts, including weekends and public holidays as required.
- Ensure proper shift handovers and communicate pending tasks/issues.
- Report operational, quality, hygiene, staffing, and equipment concerns to the reporting Chef.
- Ensure proper opening, service, closing, and handover procedures for the section.

Job Types: Full time, Permanent

Pay: ₹40,000.00 - ₹45,000.00 per month
