Position: Site Director

Reports To: Region Head

Location: Morigaon District, Assam

Role Description To manage the assigned sites.

Key Responsibilities

1. Project Management & Food Operations

- Own the project and coordinate effectively with Design & Build, Projects, Supply Chain and Operations teams.
- Coordinate with Supply Chain for efficient sourcing of kitchen equipment and regularly update the client on project progress.
- Manage menu and recipe rotation for breakfast, lunch, snacks, dinner and special lunches; develop new menus, upgrade existing menus and plan promotions, festivals and special events.
- Plan pre-preparation and supervise daily food preparation to ensure adherence to recipes, quality, quantity, cost, presentation and flavour standards.
- Enforce FIFO and ensure cold rooms, food storage, hygiene, cleaning procedures and required temperatures are maintained.
- Address issues related to equipment, food supplies, spoiled/unattractive food, defective supplies/equipment and other unusual conditions.
- Coordinate with the client for maintenance, repair and upkeep of the kitchen, equipment and other areas.
- Ensure ISO 22000:5000 standards are maintained in the kitchen area.

Organic Growth & Profitability

- Sustain and improve site profitability through timely report analysis and corrective actions for discrepancies.
- Apprise management of any serious operational reversal or threat on time.
- Meet site sales and profit targets.
- Drive organic growth through service excellence, retail offers and value-added offers.

3. Cash & Debtors Management

- Ensure accurate cash control, handover and deposition, and maintain all specified cash control documents.
- Ensure invoices are raised and delivered as per schedule and required data is shared with Accounts on time.
- Track all site invoices and ensure timely collection from the client with minimal outstanding amounts.

4. People Management & Training

- Manage the on-site team including cooks, MPWs, stewards, cashiers, Store keeper, stores assistants etc.
- Prepare activity schedules, assign duties and ensure appropriate staffing for maximum productivity and quality.
- Promote a healthy, teamwork-oriented work environment.
- Identify training needs and support development of relevant training modules.
- Ensure implementation of HR processes and staff welfare activities.

5. Communication & Client Retention

- Maintain close communication with the client on services, additional business, new initiatives and hygiene, with appropriate documentation.
- Understand and exceed client expectations to ensure complete satisfaction and 100% client retention.
- Address all client and operational issues in a timely manner.

6. Wastage Control & Cost Management

- Maintain daily leftover records and plan production accordingly.
- Implement controls to track wastage, production, sales and leftovers.




- Ensure compliance with Municipal rules for waste disposal and segregation.
- Minimise wastage and recycle excess ingredients for other dishes while maintaining the highest hygiene standards.
- Coordinate with Purchase to understand cost trends and revisions.

7. Legal Compliances

- Coordinate with HR, QHSE and Legal teams to ensure all legal compliances are met and copies are maintained at the site.

8. Systems Implementation & Process Management

- Ensure all company systems and processes are implemented and followed as per policy.
- Ensure work processes are appropriately documented and displayed.

9. Procurement & Inventory Management

- Monitor daily raw material indents.
- Ensure all processes and checklists are followed and accurately maintained daily.
- Ensure goods are stored as per company norms.

10. QHSE

- Ensure strict adherence to safety and hygiene policies and maintain safety scores above benchmark.
- Control ingredient quantity and quality as per specifications and train receiving-area staff on ingredient quality.
- Maintain records of hygiene-related procedures, initiatives and incidents.
- Coordinate with QHSE teams for implementation of policies and processes and take operational ownership of all QHSE processes.
- Ensure timely reporting of QHSE incidents and communication of all possible on-site hazards to concerned departments.
- Ensure timely renegotiation of existing contracts and rate renewals.
- Ensure the site operates with valid and up-to-date agreements.

Qualifications & Experience

- Degree in Hotel management /graduate.
- Experience in F&B; industry of 15-20 years.
- Business acumen.
- Commitment to quality.
- Strong financial and budgeting skills.
- Sound written and verbal communication.
- Well-groomed and able to represent Sodexo in a professional manner.
- Customer focused.
