1. Position Overview

Mahendra Mithaiwala Private Limited is looking for an experienced and result-oriented Production Manager to lead and supervise day-to-day food production operations at our Kakinada facility. The role will be responsible for ensuring productive production planning, consistent product quality, food safety, hygiene, cost control, manpower utilisation and timely dispatch while maintaining the company’s standards for sweets, savouries, bakery and other food products.

2. Key Responsibilities

· Plan, organise and supervise daily production activities in line with sales requirements, production schedules and dispatch commitments.

· Manage end-to-end production operations covering preparation, processing, cooking, cooling, packing, storage and dispatch, as applicable to the product category.

· Prepare daily, weekly and monthly production plans and ensure optimum utilisation of manpower, raw materials, machinery and production capacity.

· Monitor production output, productivity, yield, wastage, rework and downtime, and take corrective action to improve operational efficiency.

· Ensure products are manufactured consistently according to approved recipes, specifications, process parameters and quality standards.

· Coordinate with Purchase, Stores, Quality, Sales and Dispatch teams to ensure uninterrupted production and timely availability of finished products.

· Control raw-material consumption and minimise production losses, excess usage, spoilage and avoidable wastage.

· Ensure proper handling, storage and traceability of raw materials, packaging materials, work-in-progress and finished goods.

· Implement and maintain high standards of food safety, personal hygiene, sanitation, housekeeping and Good Manufacturing Practices (GMP).

· Ensure compliance with applicable food-safety and statutory requirements, including internal SOPs and relevant FSSAI requirements.

· Monitor equipment and machinery performance and coordinate preventive maintenance with the maintenance team to minimise breakdowns.

· Maintain production records, batch records, wastage reports, yield reports, inventory consumption reports and other operational MIS.

· Lead, train, guide and motivate production staff, supervisors and workers; allocate duties and monitor attendance and productivity.

· Identify skill gaps and conduct or coordinate training on SOPs, food safety, hygiene,



equipment handling and safe working practices.

· Investigate production deviations, customer complaints and quality issues, identify root causes and implement corrective and preventive actions.

· Maintain safe working practices across the production area and ensure employees use required PPE and follow safety procedures.

· Continuously identify opportunities for process improvement, standardisation, productivity enhancement and cost reduction.

3. Production Planning & Operations

· Translate demand forecasts and sales requirements into practical production schedules.

· Set production priorities based on product shelf life, demand, dispatch schedules and available capacity.

· Monitor daily production against plan and report variances with reasons and corrective actions.

· Ensure adequate manpower and production resources are available for peak-demand periods, festivals and special orders.

· Maintain disciplined production flow and reduce bottlenecks at critical process stages.

4. Quality, Food Safety & Hygiene

· Ensure adherence to approved recipes, formulations, process controls and product specifications.

· Work closely with the Quality/QA team to maintain product quality, consistency and food safety.

· Ensure cleaning and sanitation schedules are followed for production areas, utensils, machinery and equipment.

· Monitor critical hygiene practices including personal hygiene, pest-control requirements and prevention of cross-contamination.

· Support internal audits, inspections, corrective actions and continuous improvement initiatives.

5. Manpower Management

· Plan manpower deployment by production section and shift.

· Supervise production supervisors, operators, helpers and other assigned personnel.

· Set clear responsibilities and performance expectations for team members.

· Monitor productivity, discipline, attendance and adherence to work instructions.

· Develop a responsible and performance-oriented production team through coaching and on-the-job training.

6. Inventory, Cost & Waste Control

· Coordinate with Stores and Purchase to maintain adequate raw-material availability without unnecessary excess inventory.

· Monitor recipe-wise material consumption, yield and variance against standards.

· Track wastage, rejection,



rework and spoilage and drive reduction initiatives.

· Support cost-saving initiatives without compromising product quality or food-safety standards.

7. Reporting & MIS

· Prepare and submit daily production reports and periodic performance summaries.

· Track key metrics such as production volume, productivity, yield, wastage, rejection, downtime and manpower utilisation.

· Highlight production constraints, quality deviations, material shortages and operational risks to management.

· Maintain accurate documentation and records for traceability and management review.

8. Candidate Eligibility

· Minimum 5–8 years of relevant experience in food production, food manufacturing, sweets, bakery, confectionery, FMCG or a similar food-processing environment.

· Educational qualification: B.Sc. / M.Sc. in Food Science, Food Technology or a closely related discipline.

· Hands-on experience in production planning, manpower management, quality coordination and food-safety practices.

· Strong understanding of production processes, hygiene, sanitation, GMP and process discipline.

· Ability to manage teams and work effectively in a fast-paced production environment.

· Candidate must be willing to work in Kakinada, Andhra Pradesh.

11. Compensation & Location

CTC: Up to ₹6 LPA, based on relevant experience, qualifications, skills and overall suitability.

Location: Kakinada, Andhra Pradesh.
