About the RoleWe are looking for a Food Technologist – Product Development & Innovation to join our team in Chennai and contribute to the development, optimisation, and scale-up of FMCG food products.

This role combines food science, product development, quality, manufacturing, and commercial thinking. You will work across the product lifecycle — from initial concepts and laboratory trials through sensory evaluation, formulation optimisation, production trials, and commercial scale-up.

The successful candidate will not only focus on whether a formulation works technically, but also consider consumer acceptance, product consistency, manufacturability, cost, shelf life, regulatory requirements, and commercial viability.

You will collaborate closely with R&D;, Quality, Manufacturing, Supply Chain, Procurement, and Commercial teams to turn product concepts into scalable FMCG products.

Key ResponsibilitiesProduct Development &

- Formulation

- Develop and optimise food product formulations based on consumer requirements, market opportunities, quality standards, and commercial objectives.
- Translate product concepts into practical formulations, specifications, and prototypes.
- Conduct laboratory trials and iterative formulation testing.
- Evaluate raw materials and their impact on product quality, performance, cost, and consistency.
- Optimise formulations while maintaining desired taste, texture, appearance, nutritional characteristics, and product performance.
- Maintain accurate formulation records, trial reports, specifications, and development documentation.

Research & • Development
- Plan and conduct structured product development experiments and trials.
- Design comparative trials to evaluate ingredients, processing parameters, formulations, and product performance.
- Analyse experimental results and use data to guide formulation decisions.
- Support innovation projects from concept development through commercialisation.
- Research emerging ingredients, technologies, processing methods, and FMCG product trends.




- Contribute to the development of a structured product innovation pipeline.

Sensory & • Consumer Evaluation
- Plan and conduct sensory evaluations using appropriate testing methodologies.
- Assess attributes such as taste, aroma, texture, appearance, mouthfeel, and overall acceptability.
- Analyse sensory results and translate findings into actionable formulation improvements.
- Work with commercial and customer-facing teams to incorporate relevant consumer feedback into product development.

Scale-Up & • Manufacturing Support
- Support the transition of products from laboratory trials to pilot and commercial production.
- Work with manufacturing teams to ensure formulations are practical, repeatable, and scalable.
- Assist with production trials, process optimisation, and troubleshooting.
- Investigate formulation and process-related deviations and support root-cause analysis.
- Help establish appropriate process parameters and product specifications for commercial production.
- Monitor product consistency during scale-up and initial production runs.

Quality, Food Safety & • Compliance
- Work closely with Quality and Manufacturing teams to ensure products meet defined quality and food safety requirements.
- Support the development and maintenance of raw material, in-process, and finished-product specifications.
- Conduct or coordinate appropriate analytical and quality checks during product development.
- Ensure laboratory and development activities are properly documented and traceable.
- Support compliance with applicable food safety, labelling, regulatory, and customer requirements.
- Contribute to shelf-life studies and stability assessments where required.

Cost & • Commercial Optimisation
- Consider ingredient costs, processing requirements, packaging, yield, and manufacturing efficiency during product development.
- Support formulation optimisation without compromising product quality or consumer expectations.
- Work with Procurement and Commercial teams to evaluate alternative raw materials and suppliers.
- Identify opportunities to improve product margins, manufacturing efficiency, and scalability.
- Support cost and feasibility assessments for new product concepts.

Documentation & • Knowledge Management
- Maintain organised records of formulations, trials, test results, sensory evaluations, specifications, and product development activities.
- Develop clear technical reports and communicate findings to relevant stakeholders.
- Maintain version-controlled formulation and product documentation.
- Build structured technical knowledge that can support future product development and scale-up.

What We're Looking For
- Strong understanding of Food Science,



Food Technology, formulation, processing, and product development principles.
- Practical experience with laboratory trials, sample preparation, experimentation, and technical documentation.
- Strong understanding of food safety, quality control, and product specifications.
- Ability to interpret experimental and sensory data and convert findings into practical decisions.
- Strong problem-solving skills with a structured approach to troubleshooting.
- Ability to balance technical requirements with consumer expectations, manufacturing practicality, and commercial objectives.
- Robust attention to detail and commitment to product consistency.
- Good written and verbal communication skills.
- Ability to collaborate effectively with R&D;, Quality, Manufacturing, Procurement, Supply Chain, and Commercial teams.
- Comfortable working in a fast-paced, data-driven environment where priorities may evolve as products move from development to commercialisation.

Qualifications
- Bachelor's or Master's degree in Food Technology, Food Science, Food Engineering, Biotechnology, Nutrition, or a related discipline.
- Relevant experience in FMCG, food manufacturing, product development, R&D;, or quality is preferred.
- Fresh graduates with strong technical knowledge and relevant project, laboratory, or product-development experience may also be considered.
