Job Summary
We are looking for a skilled and experienced DCDP – South Indian to join our Food & Beverage Production team. The candidate will be responsible for preparing authentic South Indian cuisine, maintaining food quality and presentation standards, supervising kitchen operations, and ensuring compliance with hygiene and food safety standards.
Key Responsibilities
- Prepare and cook a wide range of authentic South Indian dishes as per hotel standards and recipes.
- Handle daily food preparation, cooking, and mise en place efficiently.
- Ensure consistency in taste, quality, portion size, and presentation.
- Supervise and guide Commis Chefs and other junior kitchen staff in the South Indian section.
- Monitor the quality and freshness of raw materials and ingredients.
- Ensure proper storage, handling, and rotation of food items according to FIFO standards.
- Maintain high standards of kitchen hygiene, cleanliness, and food safety.
- Assist in menu planning, recipe development, and daily specials.
- Coordinate with other kitchen sections to ensure smooth and timely food production.
- Monitor wastage and control food costs through proper portioning and utilization of ingredients.
- Ensure all kitchen equipment and work areas are properly maintained and cleaned.
- Support the Executive Chef and Sous Chef in daily kitchen operations.
- Train and develop junior team members in South Indian cooking techniques and kitchen procedures.
Required Skills & Qualifications
- Diploma or Degree in Hotel Management / Culinary Arts preferred.
- 2–5 years of relevant experience in South Indian cuisine, preferably in a 4-star or 5-star hotel.
- Strong knowledge of Kerala, Tamil Nadu, Karnataka, and Andhra-style South Indian cuisine.
- Good knowledge of traditional South Indian cooking methods, ingredients, and spices.
- Ability to work efficiently in a high-volume hotel kitchen.
- Good leadership, communication, and team-management skills.
- Knowledge of food safety, hygiene, and HACCP practices.
- Ability to maintain quality and consistency under pressure.
