Production In-charge / Head Baker (Industrial Bun Plant)

About the plant

TrigoBake manufactures buns and bread for QSR supply. We are a B2B operation producing burger buns, pav buns, hot dog buns, and pizza bases for franchise outlets across Kerala and southern states on a fixed weekly delivery cycle.

We are not a retail bakery. Every product leaves the plant against an outlet order and is measured against a franchise QC standard.

The role

We are appointing a production lead to take full ownership of the plant floor: output, specification, cost, and team. You will run the line to a documented standard and scale it as our order book grows.

What you will own

Production

- Overlooking and guiding the team to achieve the target with the best quality, consistency on time
- Meeting output targets to specification. Handling a minimum of 1 lakh pieces per production cycle is the baseline expectation for this role
- Shift planning, manpower allocation, and line balancing

Process control

- Standard recipes in baker's percentage for every SKU
- Control of dough final temperature, water temperature, and mixing time on every batch
- Proofer temperature and humidity settings,



and oven bake profiles per product
- Batch records: dough temperature, proof time, bake time, piece weight checks, output count, rejections
- Piece weight tolerance and in-line weight checks

Quality

- Finished product specification: weight, dimensions, crumb, crust colour, softness, shelf life
- Root cause analysis and corrective action on any customer quality feedback
- Incoming raw material checks: flour specification, yeast, improver, fat, sugar
- Hygiene and food safety to FSSAI requirements and customer audit standards

Team

- Train the baking team on standardised methods
- Build a shift structure with depth, so output does not depend on any one person

Requirements

- Hands-on across the full bun line: spiral mixer, divider, rounder, moulder, proofer, tunnel or rotary or deck oven, slicer, packing
- Ability to write and work from recipes in baker's percentage
- Working command of dough temperature control and fermentation management, including adjusting for ambient conditions
- Ability to diagnose a product defect and trace it to its process cause
- Willing to be based full time in Annur, Coimbatore
- Hindi language is a must

This is a plant production role. Retail bakery, hotel, cafe, and patisserie experience alone will not meet the requirement.

Pay: ₹40,000.00 - ₹50,000.00 per month
