Senior BBQ / Grill / Tandoor Chef / Churrasqueira — Cavelossim, South Goa

We are hiring an experienced BBQ / Grill / Tandoor Chef to take responsibility for our outdoor barbecue station in Cavelossim, South Goa.

Our BBQ menu will focus primarily on fresh grilled fish, grilled chicken and paneer skewers.

Candidates do not necessarily need previous experience with our specific type of barbecue. An experienced Tandoor Chef, Grill Chef or cook with strong experience preparing and grilling fresh fish and chicken can be an excellent fit for this position.

Training will be provided on our specific BBQ equipment, recipes and techniques, but this is not a junior position. We need someone with solid cooking experience who can quickly take ownership of the station.

Key Responsibilities

✅ Take responsibility for the daily organization and operation of the BBQ station.

✅ Prepare and cook fresh fish, chicken and paneer skewers consistently according to restaurant standards.

✅ Prepare marinades, seasoning, skewers and other BBQ mise en place.

✅ Control fire, heat, cooking temperatures and timing to achieve consistent results.

✅ Understand and control the correct doneness of fish and chicken without drying or overcooking the product.

✅ Organize the station efficiently to handle busy service and multiple orders simultaneously.

✅ Anticipate preparation and product requirements according to expected covers and stock levels.

✅ Maintain strict hygiene and prevent cross-contamination when handling raw fish, poultry and other products.

Qualifications

✔ Minimum 2 to 4 years of relevant professional cooking experience.

✔ Previous experience as a BBQ Chef, Grill Chef,



Tandoor Chef or similar position.

✔ Strong experience cooking fresh fish and/or chicken over high heat.

✔ Comfortable handling and preparing raw fish and poultry.

✔ Confident working with fire, grills, tandoor or other high-temperature cooking equipment.

✔ Able to manage a busy station independently and maintain quality during high-volume service.

✔ Strong mise en place and organizational skills.

✔ Reliable, fast, clean and calm under pressure.

✔ Hindi and working English preferred.
