Job Summary

The Paneer Operator is responsible for operating and monitoring the paneer manufacturing process, ensuring product quality, food safety, hygiene standards, and production targets are achieved. The role involves handling milk processing, coagulation, pressing, cutting, packaging coordination, and maintaining production records.

Key Responsibilities

Production Operations

- Operate paneer production equipment and machinery as per SOPs.
- Monitor milk quality and processing parameters during production.
- Perform coagulation, curd formation, pressing, and cutting activities as per product specifications.
- Ensure timely production according to daily production plans.
- Minimize product wastage and process losses.

Quality Control

- Follow quality standards and specifications for paneer production.
- Conduct routine checks on texture, moisture, weight, appearance, and product quality.
- Report any quality deviations immediately to the supervisor.
- Ensure compliance with FSSAI and food safety requirements.

Hygiene & Food Safety

- Maintain cleanliness and sanitation of production areas, equipment, and utensils.
- Follow Good Manufacturing Practices (GMP)



and personal hygiene standards.
- Use PPE and follow all safety guidelines while handling equipment.

Equipment Handling

- Operate and monitor production machinery safely.
- Perform basic cleaning and routine maintenance of equipment.
- Report machine breakdowns and maintenance requirements promptly.

Documentation

- Maintain daily production records and process logs.
- Record batch details, production quantities, wastage, and downtime.
- Support traceability and quality documentation requirements.

Safety Compliance

- Follow all company safety procedures and work instructions.
- Ensure safe handling of hot liquids, machinery, and cleaning chemicals.
- Participate in safety and quality training programs.

Educational Qualification

- ITI / Diploma / Higher Secondary (12th Pass) preferred.
- Experience in dairy, food processing, or paneer manufacturing will be an added advantage.

Experience

- 1–3 years of experience in paneer manufacturing or dairy production preferred.
