Job Description
F&B; Audit & Controller
Role Summary
The F&B; Audit & Controller is responsible for safeguarding the company's food and beverage profitability and operational integrity across all outlets/units. The role combines two functions:
(1) F&B; Audit conducting periodic and surprise audits of outlets to verify compliance with SOPs, controls, and statutory requirements.
(2) F&B; Controller — monitoring, analysing and controlling food and beverage costs, and providing accurate MIS to management. The role requires frequent travel across outlets/units and close coordination with operations, purchase, stores and finance teams.
Key Responsibilities
A. F&B; Audit
- Conduct periodic and surprise audits of all F&B; outlets/units to verify compliance with company SOPs, hygiene and food-safety norms.
- Verify billing accuracy in the POS system, including voids, discounts, complimentary sales and staff-meal entries.
- Conduct surprise stock counts and periodic cycle counts; reconcile physical stock against system records.
- Audit the receiving department — verify weighing scales, quality checks, and rates billed against purchase orders and approved price lists.
- Identify instances of leakage, pilferage, wastage or non-compliance, and recommend corrective and preventive action.
- Prepare detailed audit reports with findings, risk ratings and action plans; track closure of open points with outlet teams.
- Review vendor invoices, contracts and rate agreements for accuracy and compliance.
- Ensure outlets maintain statutory and food-safety compliance (e.g., FSSAI licensing and record-keeping).
B. F&B; Controller
- Monitor and control food and beverage costs across outlets against approved budgets and targets.
- Prepare daily,
weekly and monthly cost, consumption and variance reports for management.
- Maintain and periodically update recipes, standard costings and menu pricing in coordination with the culinary team.
- Reconcile POS sales data with inventory/costing systems.
- Conduct month-end stock valuation, cost-of-sales computation and variance analysis with explanations.
- Coordinate with purchase, stores and kitchen teams to drive cost-control and wastage-reduction initiatives.
- Assist in preparing annual budgets and periodic forecasts for the F&B; department.
- Monitor par stock levels, expiry tracking and spoilage to minimise inventory losses.
- Provide management with accurate, timely MIS reports and actionable cost-saving recommendations.
Qualifications & Experience
- Minimum 4–6 years of relevant experience in F&B; cost control and/or F&B; audit within hospitality, restaurant chains, catering or Dine In operations.
- Prior experience with multi-outlet or multi-unit operations is preferred.
Key Skills & Competencies
- Strong working knowledge of F&B; costing principles, inventory management systems and POS platforms.
- Sound understanding of internal controls, audit procedures and statutory/food-safety compliance requirements.
- Solid analytical ability with high attention to detail and accuracy.
- Advanced proficiency in MS Excel and MIS reporting; familiarity with ERP/accounting systems.
- Good verbal and written communication skills, with the ability to coordinate across outlets and departments.
- High personal integrity, sound judgement and the ability to work independently with minimal supervision.
- Willingness to travel frequently across outlets/units, including short-notice visits.
