About the Role
Foodsure is looking for an experienced and technically strong Sr. Executive – Food & Beverage R&D; to join our Research & Development team.
The role involves end-to-end product development , including formulation, laboratory trials, sensory evaluation, raw-material validation, costing, process optimization, pilot trials, scale-up and commercialization.
The candidate will be responsible for independently managing R&D; projects, solving formulation and process-related challenges, coordinating with clients and suppliers, and ensuring projects are completed within defined quality, cost and turnaround-time requirements.
The ideal candidate should have strong hands-on exposure to Food & Beverage formulation and product development , with the ability to work across Lab → Pilot → Factory → Commercial Scale .
Key Responsibilities1. Product Development & Formulation
- Develop current food and beverage products based on client briefs, market requirements and product concepts.
- Formulate and optimize recipes considering taste, texture, appearance, stability, functionality, cost and process feasibility .
- Conduct laboratory trials and systematically record formulation changes.
- Manage multiple formulation projects simultaneously.
- Drive the complete product development cycle from:
- Concept → Formulation → Trial → Iteration → Sensory Evaluation → Validation → Scale-Up → Commercialization .
- Identify and resolve formulation failures and technical challenges.
- Optimize existing products based on sensory, cost, quality or process requirements.
- Maintain clear formulation versions and development records.
1. Scale-Up & Commercialization
- Take successful laboratory formulations through pilot-scale and commercial-scale trials .
- Coordinate with manufacturing teams during scale-up.
- Identify differences between laboratory, pilot and production conditions.
- Troubleshoot process-related issues during scale-up.
- Support manufacturing partners in achieving the required product specifications.
- Ensure the final commercial product remains aligned with the approved formulation and sensory profile.
- Monitor trials and ensure timely project closure.
1. Sensory Evaluation & Product Benchmarking
- Plan and conduct structured sensory evaluations.
- Organize internal evaluations, client tastings and product trials.
- Evaluate products based on:
- Taste
- Aroma
- Texture
- Appearance
- Overall acceptability
- Analyse sensory feedback and convert it into actionable formulation improvements.
- Benchmark products against market references and competitor products.
- Maintain sensory scorecards and records for different formulation iterations.
1. Raw Material & Ingredient Evaluation
- Evaluate new and alternate raw materials for product development.
- Assess ingredients based on functionality, quality, application suitability, compliance and cost .
- Conduct ingredient trials and evaluate their impact on the final product.
- Coordinate with suppliers for:
- Ingredient samples
- Technical specifications
- COAs
- Product information
- Application support
- Maintain updated ingredient and raw-material databases/decks.
- Identify potential risks related to availability, quality variation and price fluctuations .
1. COGS & Cost Optimization
- Prepare and regularly update COGS (Cost of Goods Sold) for formulations.
- Calculate the cost impact of formulation changes and ingredient substitutions.
- Coordinate with procurement regarding ingredient pricing.
- Identify opportunities for cost optimization without compromising product quality.
- Maintain accurate and version-controlled costing sheets.
- Ensure formulations remain aligned with defined commercial cost targets.
1. Client Handling & Technical Communication
- Understand client requirements, product briefs and technical expectations.
- Convert client requirements into clear R&D; development plans.
- Coordinate product development trials and client tastings.
- Present formulation options, trial outcomes and sensory results to clients.
- Communicate project feasibility, timelines, costing and technical limitations clearly.
- Manage client feedback and incorporate relevant changes into formulations.
- Maintain professional communication throughout the project lifecycle.
1. Technical Documentation
- Prepare and maintain formulation sheets and product development records.
- Maintain technical dossiers and product specification documents.
- Record trial observations, formulation revisions and sensory results.
- Ensure documentation is complete, accurate and version-controlled.
- Maintain documentation required for internal review, client communication and commercialization.
- Ensure technical documentation is aligned with applicable compliance requirements.
1. Project Management & Reporting
- Manage R&D; projects from initiation through closure.
- Track project TAT (Turnaround Time) and development milestones.
- Maintain project status reports and formulation trackers.
- Identify project risks, technical blockers and potential delays at an early stage.
- Provide regular updates to the R&D; Manager and management.
- Ensure assigned projects are completed within agreed timelines.
- Take ownership of delayed or technically challenging projects and drive them toward resolution.
1. Team Management & Mentoring
- Guide Assistant Managers, Junior R&D; Executives and Interns in formulation and product development activities.
- Review formulation trials,
documentation and technical work prepared by junior team members.
- Provide technical guidance during laboratory and pilot trials.
- Support team members in troubleshooting formulation challenges.
- Allocate and monitor R&D; activities based on project priorities.
- Promote disciplined documentation, technical accuracy and timely execution.
